A Culinary 🎶Symphony at Bardero: Where Flavors Reign Supreme
Bardero, meaning 🪵 “woodcutter,” aptly carves out a niche for itself by masterfully blending Spanish, Latin, and Asian culinary traditions into an unforgettable gastronomic journey. With precision and artistry, this establishment delivers dishes that are both daring and delightful, earning its place among the finest dining experiences.
Tuna 🐠Tartare defines Bardero’s pièce de résistance, the Tartare, is a revelation. Fresh, hand-cut tartare is elevated by the bold, not so spicy sauce, while trout roe adds bursts of briny richness. The fried egg foam introduces an ethereal creaminess, weaving the flavors together seamlessly. Nestled atop al dente noodles, this dish achieves a balance of textures that is both playful and sophisticated. Each bite feels like a celebration, with the steak squares practically melting in your mouth. A must-try and the crown jewel of the menu.
Octopus 🐙Kimuchi with Potato🥔 Gnocchi The Octopus Kimuchi is a close contender for stardom. Grilled to perfection, the octopus boasts a smoky tenderness that is nothing short of divine. Yet, the surprise lies in the gnocchi—pillowy bites of potato heaven paired with a velvety, umami-rich sauce. All the elements danced a harmonious tarantella in your mouth.
Burrata with Grilled 🍆🥒🧅Vegetables This Mediterranean marvel redefines the Burrata experience. Yellow beetroot adds a subtle sweetness, while zucchini and eggplant bring earthy notes. The poppy seeds, toasted to perfection, provide a delightful crunch, making every bite a symphony of textures and flavors. The dish pays homage to Italian roots while daring to innovate—a dance of tradition and creativity on the palate.
Katsu Sandro 🥪 The Katsu Sandro introduces a playful, informal touch to the menu. Encased in impeccably baked bread, the Iberian pork cutlet is buttery, crisp, and indulgent. Each bite is a testament to Bardero’s ability to elevate comfort food into an art form.
Eel Taco 🌮with Quail Egg and Iberian Bacon An imaginative take on fusion cuisine, the eel taco is a flavor bomb. The crunch of the Iberian bacon contrasts beautifully with the delicate eel, while the quail egg, when broken, ties the elements together in a luxurious, silky embrace. A bold dish that pushes boundaries.
Lemon 🍋🥧Tart with Passion Fruit and Coconut Dessert is anything but an afterthought at Bardero. This lemon tart redefines the classic, introducing the tropical brightness of maracuyá and the nutty crunch of coconut flakes. The meringue crust, airy yet substantial, adds a final layer of indulgence. A fitting finale to a meal full of surprises.
The Bardero Experience Beyond the food, Bardero offers an ambiance that is both welcoming and sophisticated. Being hosted by the queen of the site, 👸🏻Letizia (yes, like the queen of Spain herself) makes the whole journey an unforgettable ride of flavors as she owns and knows every must that you don’t want to miss. As well as a big shout out to the rest of the🧒🏻👩🏼 team that supported her with every demand from our curious appetite. The relaxed yet vibrant atmosphere perfectly complements the creative energy of the Embajadores neighborhood, making Bardero a culinary oasis.
With its bold approach to fusion and its commitment to excellence, Bardero doesn’t just serve food, it curates an experience.

Read moreBest restaurant we went to our whole trip. We only found this through Google, as it's not in a very central location. We made a reservation to be safe, but we couldn't make the time anymore and decided to come right at opening the day before to see if we could get a table. They were able to give us a seat at the bar, suggesting that they were fully booked the rest of the night. So definitely make a reservation. The environment is very nice and romantic, even at the bar. The bartender helped us order and recommend dishes, and was very kind and helpful.
We ordered the beef tartare (€19), which is not on the menu but probably the most ordered thing in the restaurant. Not sure why it's off the menu but they let us know when we ordered that that was an option. We also tried the raw sea bass (€16.50), katsu sando (€14.80), and pear dessert (€8). Everything was absolutely amazing. The beef tartare, which comes on a bed of noodles, was very delicious but needs to be mixed pretty thoroughly as it's quite creamy. The raw sea bass was amazing and surprised me, as it was something I didn't want to order at first. Must try. The katsu sando was the only thing I wouldn't order again, but only because I've had a lot of katsu in my life and it wasn't anything special for me. The pear dessert was SO tasty - it's torched similar to the creme brulee and had the most delicious taste and texture.
Including drinks, we paid around €70 for the meal. For the quality, it was 100% worth it. The service was also amazing and the bartender checked with us after each dish to make sure we were doing well. We were also very full and most other tables ordered the same thing as us. Bardero knows what they do best and stick to it. Please come try this if...
Read moreI made a booking for my colleagues and myself for this evening and received an email confirmation. We traveled a significant distance to have a celebratory meal before a business event tomorrow.
When we arrived, the hostess would not seat us because it had rained and the terezza was apparently closed (though it was not raining at the time). She had a horrible, condescending, and dismissive attitude and refused to try to make any accommodation, even though the restaurant was almost empty. She also did not offer to look at the schedule for other days or make any attempt to improve the situation.
My colleagues felt so uncomfortable with the situation they wanted to leave immediately. We were left scrambling to find an alternative place to eat, with limited options. Shortly after leaving we received a cancellation to our reservation due to weather.
I am extremely disappointed in this experience. It is 2023 there is absolutely no reason why you cannot alert customers before they travel if you cannot accommodate a...
