Awesome bar! Their focus is on sherry and sherry based cocktails (of which they have a LOT), but they also have an impressive selection of rum, gin, whisk(e)y, and more. I came for the sherry and received great advice and recommendations from the various categories. So many sherries are available by the glass at great prices, and they have fancy more expensive bottles if you want to splurge.
The bar itself is neat and organized. The bartenders take pride in their work and are clearly experienced. In addition to the selection of sherry, I was most impressed by the menu of sherry cocktails. I like it when a bar has a unique drink program that takes something specific and makes it the center of attention. Any craft cocktail bar can make any craft cocktail, but Premier Sherry is able to offer a variety of unique drinks that you couldn’t find elsewhere due to their array of opened bottles of sherry. In addition, since sherry is their focus, bottles are being used, emptied, and new ones opened, so you wouldn’t get a drink made with a stale bottle.

We started slowly on the second night wth classics, gin martini and an old fashioned. Probably the second best old fashioned that I have ever had. We saw a technique with Helens gin martini we'd never seen before, wet the shaker with the Vermouth and then tip it out!! This was followed with waiters choice for both our next drinks, Helen got a very nice dirty vodka martini and I'm not sure what I got but it had Ron zacapas, orange bitters ginger syrup and it tasted incredible. After an introduction from our host (Eduardo), we requested if we could try a flight (a tasting of all the sherry's on offer). Not only did Eduardo oblige us but he was also a wealth of information about the sherry's and local culinary culture and suggestions to visit.
