In my last trip to Valencia I had the chance to visit The Fitzgerald on Gran Vía, and honestly, it raised the bar. From the very first moment, it was clear this place takes its concept seriously. There are places that serve food, and then there are places that craft an experience and serve main character energy. The Fitzgerald on Gran Vía in Valencia belongs firmly in the second category. The atmosphere hits you right away and provides just the right kind of energy. Even the music felt intentional — present, but never overwhelming. You walk in expecting a good burger, but what you get is something far more curated. I’ve tried more burger spots than I can count — but this place stood out. We went in curious about the monthly specials and left seriously impressed. El Paquito burger was a hit from the first bite — a juicy lamb patty, perfectly cooked, and layered with flavor in that bold, signature Fitzgerald style finished in a Josper oven. It feels extra meaty cause there’s a layer of pulled lamb and it comes with a signature BBQ sauce that is really tasty if you love it. We also ordered the Roma Icon burger, and really caught our attention. The flavor contrast was smart and unexpected — a more adventurous choice, totally worth it. Definitely a standout for those who want more than the usual. The grilled carbonara with real “guanciale” and parmesan cheese makes a huge difference. We also shared the limited “Ignacios” (nachos with guacamole), which were crisp, well-seasoned, and exactly the kind of bite you hope for when ordering a “special.” Crunchy, vibrant and generously topped. All paired with the Jelly Berries milkshake, which was light, fresh and smartly balanced, it made for an unexpectedly refined combo.The Jelly Berries milkshake was fresh, playful, and surprisingly light — the kind of shake that doesn’t weigh you down, just lifts the whole experience. And finally, a poem: the cheesecake with warm Nutella…soft, rich and slightly messy in the best way. That dessert alone was reason enough to return. Rich, warm, indulgent — it closes the experience on exactly the right note. Spectacular. Beyond the food, the staff deserves a mention. Respectful, attentive, and genuinely friendly — you feel well taken care of without ever being rushed. The space itself is a circus, full of character. Even the music felt thought-through — just the right energy for the setting. Highly recommended for anyone who believes casual dining can still be done with purpose and precision. I thought I’d share this feedback with no other intention than being constructive and hoping you guys bring back the quality standards you used to have and I was enjoying over the last 4 years. Here the facts:

It’s the 3rd time in a row that the burger misses an ingredient in the restaurant at Gran Via. The last incident happened last night in a guacamole veggie with no guacamole that I picked up. (See photo). On the first two previous incidents, I complaint to the manager, who told me that they are having new staff. It’s worth mentioning that the manager came himself to deliver a new order, which I really appreciated. I understand that training can be challenging, especially in times of high staff turnover. However, that’s not an excuse, mainly when these kind of mistakes keep happening and could pose a public health risk if unintended allergenic ingredients are added to the wrong order. A training program should be robust enough to deal with the staff rotation.

Moreover, last night while I was waiting for my order I could see the kitchen staff swapping ingredients from burgers to burgers on the preparation table. That should not happen.

On top of this, over the last year or year and a half I have been noticing that the amount of toppings has been cut down. As example, the little amount of lettuce on the guacamole burger (see photo), or the thin slices of Brie cheese when they used to be really thick.

I am looking forward to your response and hoping to notice the difference on...

Truly awful experience. A hipster haven. It took them thirty minutes to cook a hamburger. I was waiting so long I was convinced they were slaughtering the cow in the back. When I asked when my burger was ready, I was told it would be ready when it's ready! And despite my asking for it to be cooked well done, it was still undercooked. I could have walked all the way to Five Guys, ordered and eaten my burger, and walked back again by the time these clowns actually get round to serving you. If you've no problem paying the guts of €9-€10 euros for a hipster burger that takes a bunch of millennials more than a half hour to cook, then this is the place for you. I'll stick with Five Guys!

Truly awful experience. A hipster haven. It took them thirty minutes to cook a hamburger. I was waiting so long I was convinced they were slaughtering the cow in the back. When I asked when my burger was ready, I was told it would be ready when it's ready! And despite my asking for it to be cooked well done, it was still undercooked. I could have walked all the way to Five Guys, ordered and eaten my burger, and walked back again by the time these clowns actually get round to serving you. If you've no problem paying the guts of €9-€10 euros for a hipster burger that takes a bunch of millennials more than a half hour to cook, then this is the place for you. I'll stick with Five Guys!
