In the illustrious city of Malmö, there exists an establishment of unparalleled gastronomic excellence—Dashi. Upon entering this sanctum of epicurean delight, one is immediately enveloped in an ambiance that seamlessly melds minimalist Nordic aesthetics with the profound elegance of Japanese design. The interior, adorned in subtle shades of light grey and natural materials, evokes a sense of tranquility and refinement, setting the stage for an unparalleled dining experience.
Our sojourn commenced with an array of hors d'oeuvres that tantalized the palate and prepared the senses for the forthcoming culinary odyssey. The initial offering, a delicate gomadofu crowned with wasabi, presented a silken texture that was nothing short of enchanting. This was succeeded by a citrus-infused tartelette, its forellrom marinated in Dashi, imparting a harmonious blend of freshness and umami that danced upon the tongue. The progression to the 'Not a Takoyaki' was a masterful segue into the ensuing sashimi course, featuring a tender piggvar and Norwegian råräka, each bite a testament to the kitchen's meticulous craftsmanship.
The chawanmushi, a Japanese egg custard, was reimagined with the addition of lobster and tapioca, exemplifying a harmonious interplay of textures and flavors. This dish, along with the other courses, underscored the establishment's unwavering commitment to culinary perfection, with each element thoughtfully curated to provide an immersive and transcendent experience.
The pièce de résistance was a meticulously charred duck course, its preparation and presentation reflecting an unwavering dedication to the culinary arts. The dessert trio that concluded our repast was a revelation, with each component crafted with an artistry that defied conventional expectations. A particular highlight was the apple and seaweed crisp topping the ice cream, a testament to the establishment's innovative spirit and reverence for tradition.
The service, conducted with an air of refined professionalism, was attentive without encroaching upon our dining experience. The staff's deep knowledge of the menu and their ability to anticipate our needs contributed significantly to the evening's success. The sommelier's selection of sake pairings was both thoughtful and enlightening, each pour enhancing the flavors of the dishes and enriching our understanding of Japanese beverage traditions.
In summation, Dashi in Malmö offers an unparalleled culinary journey that transcends the ordinary. The meticulous attention to detail, innovative approach to traditional cuisine, and unwavering commitment to excellence render it a destination of choice for the discerning epicurean. To dine at Dashi is to partake in a symphony of flavors and experiences that resonate long after the meal...
Read moreIt pains me to give this place such a low score considering how good the food is, but man… the service was quite disappointing. Our waitress was clearly unhappy to do what she is doing; when she served the food she looked so grumpy to the point that it makes you as a customer grumpy. No politeness or whatsoever from the lines of “here you go”, “you’re welcome”, “thank you” etc…
Another thing is, we ordered a very simple menu; drinks we received after 12 minutes of waiting and our food took 30 minutes to come out. The restaurant was not even that full. There were 4 tables only that were busy so I don’t know what took so long, but regardless the fact that our drinks took 12 minutes and our food was very late (all of that with no explanation) 😕
Food is good at least, though a bit saltier than a...
Read moreI don’t know if this was a one-time thing or just a bad day for the employees but I was very disappointed in the ramen I got.
The eggs were completely hard boiled and really ruined the texture. I ordered a tonkotsu, and was very disappointed not only in how flavorless and thin the broth was but also in how it felt like the meat I got with the ramen felt a super cheap cut of meat. Then when it came to the preparation of the food we noticed that more or leas everything got microwaved which felt unprofessional.
I have to say though that the interior is nice and the people who work there are nice enough. But that is not why I came, I came there for good ramen and while all the other reviews seem to think it is good I was sorely...
