My wife and I were blessed with the opportunity to enjoy Etoile on their first day open in their new dining room. Surely one Michelin star was an oversight by the assessor or perhaps they have advanced that far since their last site visit. The atmosphere was amazing, the food told its own story and threw curveballs of what you would expect as normal or even from a Michelin restaurant, ingredients sourced locally and ethically whenever possible. After the meal the Staff entertained our table and the other couple eating at the same service by answering any questions and entertained a nearly one hour conversation about Swedish culture, actual (non-tourist) places to see, and explained more about dishes we had questions about. The staff was friendly to the fact that there were other excellent Michelin restaurants in the area and encouraged us to book with another if we had time in our visit. We did a hybrid drink pairing which included both wine and other beverages paired to the individual meal items; they were generous with drink pourings and refilled as needed. Frequently we leave Michelin restaurants still hungry; I couldn’t even consider another bite I was completely satiated. Worth the detour if not worth its own journey. Passionen finns där men finessen, tänket, kombinationer och det lilla extra saknas. Långt kvar tycker jag för att en stjärna ska rättfärdigas.

Recensionen innehåller en genomgång av kvällen, om du inte vill att detta ska avslöjas så undvik att läsa vidare :)

Kvällen började i en slags loungehörna där vi och två andra sällskap satt och blev erbjudna en fördrink. Ett av sällskapen hade sin soffa direkt riktad mot oss med kanske max en meters mellanrum så märkte att de aktivt försökte ignorera att titta på oss fastän vi var deras enda utsikt. Vi hade bett om alkoholfritt i glasen och vid påfyllnad kom de och skulle hälla alkoholhaltig dryck till oss. En smärre miss som isolerad inte skulle påkosta några större avdrag men adderat upp med allt ger ett intryck av bristande kommunikation.

Efter loungen blev vi inbjudna till en bardisk som agerade som showkitchen. Detta var kvällens highlight med roliga tilltugg och berättelser kring råvarorna och tillagningstekniken.

Vidare blev vi genomslussade genom deras kök där de visade hur de experiminterar fram rätter samt själva köket de tillagar rätterna i. Är säkert skoj men minns från min egna utbildning att människor som inte är i uniform och vidtagit hygienprotokollet var strikt förbjudna in där mat tilbereds.

Själva matsalen var väldig kal. Det ekade och dukar saknades (kanske en anspelning på vinterns kyla). Min vän blev placerad med ryggen mot den lilla köksö de hade i matsalen för att lägga sina finishing touches. Han fick stirra på mig och en vägg. Maten och drycken var relativt lika i sina smaker. Vi fick fel rätt i början då vi blandats ihop med det vegetariska sällskapet. TUR att de inte hade börjat äta. Maten i sig genomgående var OTROLIGT SÖT. De hade matcheat kötträtten med en pinot noir från -94 med en väldigt söt kötträtt? Vinet smakade bra för sig men tillsammans med maten var det som att dricka utspädd druvjuice. Flytande kväve användes onödigt mycket- Det är häftigt kanske de första två gångerna men efter fyra-fem gånger blir det mer "jaha och vad tillför det..?" de frysbrände också ett granulat de vispade över kväven vilket gjorde att vi bara satt där med vår rätt i fem minuter. Vit choklad användes förvånansvärt mycket, och det var nästan äckligt när det kom till efterrättsdelen av kvällen. Det alkoholfria dessertvin som serverades var honungs-saffransvatten som var OK första klunken men efter ett tag alldeles odrickbart efter några klunkar. Till de sista rätterna frågade de om vi ville ha kaffe eller te. Jag bad om vitt te. De hade inte informerat att mitt alkoholfria paket innehöll ett sött te så hade två koppar te. Dessutom bryggdes det vita teet alldeles för länge. Hajkbanan-puffen smakade bara lite banan? ingenting som var i närheten av att smaka grillat, smält eller dylikt. Hade kunnat kalla den marängswiss och jag hade haft samma koppling. flugsvamparna smakade bara vit choklad.

Fin touch att vi fick med oss menyn och att vi fick med oss hemmagjorda praliner i slutet av kvällen.

Vårt sällskap var inte särskillt imponerade över kvällen. Det kändes som de hade smakat av rätterna FÖR SIG och inte i en hel sittning. likaså med drycken.

Servicen var mycket vänlig, en eloge till dem för det.

Något jag hade önskat var att de berättade mer om råvarorna. För nu var det mer "wow kolla denna efterrätt formad som en flugsvamp 🤪" men var är förklaringen om råvarorna? Den enda gången de sa var de fått sina råvaror från var när vi fick ett svenskt ostron och japansk wagyu.

Jag känner och förstår verkligen ambitionen bakom denna restaurang och folk uppskattar uppenbarligen konceptet så min upplevelse behöver inte alls spegla din upplevelse. Men för mig var det som när jag gick gastronomi och vi hade övningsmiddagar. Bra...

Wow they have really leveled up from an already high standard since expanding the restaurant! I loved the style of moving between rooms and parts of the restaurant as the evening progressed and the courses were delicious, innovative and beautiful to look at. Many of the courses also came with a non-alcoholic beverage in addition to the pairing so all in all it felt like we got an incredible number of drinks (I chose the mixed pairing). By the end of the evening we were so full that we could barely walk - pace yourself accordingly.

All four of us, vegetarians and extreme nut allergic friend included, left incredibly happy with our evening: food, drinks and service was incredible. The vegetarian menu felt equally thought through as the non-vegetarian and the nut free substitutions were also amazing. I really applaud the Étoile team for taking such good care of all guests! Definitely one of the best restaurant experiences in my life. The restaurant is cozy and with cool decors (love their Lego flowers). Started with some drinks in the lounge, then to the bar for some starters. A walkthrough the kitchen with some history and then do the dining room for the "mains". We had their menu and the hybrid drinking package (half alcoholic and half non alcoholic), some of the drinks were a bit too sweet but overall very happy with the choice, especially their own version of cola.The staff was incredibly, very good descriptions, nice stories and funny but they seemed more stressful at the end and didn't have as much time to talk as the start. Record long seating time (we sat there for 5 hours) but enjoyed every minute. Crazy good restaurant that needs to be revisited!

Each course was equal parts creative and delicious and every course stood out for different reasons. I also want to point out that the service was out of this world. All of the staff worked as a team and made the whole experience one I won’t forget. This was a once in a lifetime meal but I hope I get to experience Etoile’s menu and ambiance again in this lifetime! It was that special. Thank you!

We ate at Etoile last night and it was phenomenal from start to finish. I believe we had 17 courses but it ended up being about 20 items. Every dish felt thoughtfully curated and each one was exceptional. Huge emphasis on what’s in season and what’s local to the area or region from the food on the plate to the inspiration behind it. Each course was equal parts creative and delicious and every course stood out for different reasons. I also want to point out that the service was out of this world. All of the staff worked as a team and made the whole experience one I won’t forget. This was a once in a lifetime meal but I hope I get to experience Etoile’s menu and ambiance again in this lifetime! It was that special. Thank you!
