So, the meat was fantastic. Unfortunately that's not the whole story.
We ordered the 220g Australian bavette (sensational) and the 300g Australian entrecote (didn't seem to be 300g and was lacking in flavour)
I doubted whether the meat was in fact cooked on their josper oven as there were no bar marks nor the distinctive charcoal flavour. The lack of caramlisation on the exterior of the steak was the real giveaway. I am quite sure that the meat is simply seared in a dry pan and then left to rest briefly in a cold josper, not really the point of having such a fantastic piece of equipment. I tried to peak into the kitchen to see if my thoughts were correct but couldn't get a close enough look to be 100% sure.
As for the sides? Well the polenta was OK, the pomme puree was pretty shocking, potatoes clearly overly boiled resulting in a watery taste with a glue like consistency, plus a little seasoning wouldn't have hurt.
Whilst I can't fault the quality of the raw produce, the meat was fantastic, everything else leaves a lot it to be desired. I wouldn't normally be so critical but when you charge these prices you leave yourself wide open to such critique.
The service was attentive without being fussy and we never had to wait too long for anything.

Edit after going more often : Yep consistent quality in kitchen + service, best place to eat meat.
