Along with Okaeri, Ichi is one of the better ramen restaurants in the area, specializing in fish bone and chicken broth-based offerings. I’ve never had a fish bone broth ramen before this and find myself coming back time after time to savor the rich, smoky flavors. It’s actually quite addictive. The chicken broth I found pedestrian in comparison.

On this particular alley, sandwiched between innumerable businesses and retailers, this small ramen place is usually packed during lunch hours, requiring one to either come early or late to finagle a seat. If you come later, be warned that the fish broth often sells out first.

Noodles can be ordered thin or thick and one can choose between a heartier, more robust broth and a less saltier version adapted to Taiwanese tastes. The noodles themselves hew towards a darker shade of olive brown than I’ve seen elsewhere, are uniformly machine cut, and cooked al dente. Prices overall lean toward the cheaper side for a ramen restaurant and the first extra helping of thin noodles is complimentary. If you prefer to add thick noodles, it will cost an extra NT$30. You can also add freshly fried garlic for NT$20, though I thought it superfluous considering the richness of the stock. The fried chicken they offer as a side is highly seasoned and served piping hot.

Asahi is on offer if you would like to enjoy a brew with your savory fish broth, but so far, no one has looked askance at me for sneaking in my own...

What a wonderful, wonderful place...the best definition of eating local. Very small and hidden but the photos on Google will lead you right to it! We were greeted but these two awesome young gentlemen who helped us decide on what to eat, in the best English they could speak but, it was more than enough because we got exactly what we came for. The best ramen to ever grace our undeserving palatte's and on top of that, they played music from our country, that's right, the changed the music to Kwaito music right after we sat down. The atmosphere, vibe and laughs we shared with everyone working there was just special. It really is just a place for locals to go and get there nightly meals but it was an experience for us. We had the spicey pork noodles(if your used to high heat items, this not burn too much for you but be warned if your not used to spicy stuff. We also had the fish ramen and there most popular dish as well, it was the first thing on the ramen menu and the chef said it was his favourite. On top of that we added fried chicken, probably and casually the best fried chicken you'll ever have!! And of course some pork belly with crackling as well. We left there with the biggest smiles on our faces, we listened to awesome Kwaito and dance music, drank some beers and had the best time!!...

Not good at all. We came here due to the very positive reviews and were very disappointed.

Service: Very poor. Customers are expected to order via the machine but no one gave us any recommendations or suggestions, they simply left you there to order alone. For first time customers, be prepared to be confused in terms of finding the right bowl of noodles.

Food: Soup broth was really bad. I am personally a fan of thick broths because it means that the cooks took a lot of time to prepare it, and it has all the goodness in it. The broth here is thick for sure, but it does not taste like it was because it has been prepared for hours. Instead it tastes like the cook has just put in lots of powdered spices and added water to it. The broth is soo thick that it tastes weird and does not go well with the other ingredients! Also they added diced onions to the soup, i have never seen this presentation in a Japanese style ramen before. Really odd!

Overall: Definitely do not...

★拉麵迷請進→FB搜尋:『台灣拉麵愛好會』、IG:twramenclub 店家不斷的用心在進化努力,基本盤穩定且不斷的嘗試新方向! 不論是麵還是態度都很棒! 除了主打的豚骨魚介外,雞白湯和煮干也是店家的強打~ 另外醬油拉麵和叉燒飯是好吃大碗又滿意的好選擇!:D ▎秋刀魚醬油干貝醬拉麵: 秋刀魚這款有兩種版本,就是差異在有沒有干貝醬。 參考麵友的食記說有干貝醬比較多層次風味,所以我也就直上這款了! 這碗我覺得碗的顏色選擇有點可惜,因為黑碗的關係根本看不出湯的顏色,視覺上稍嫌可惜了一點。 湯的味道有別於定番,多了秋刀魚帶出的特有風味,佐上干貝醬帶出的干貝鮮甜,蠻順口的!而且干貝的量蠻多的,碗底不少,最後幾口幾乎都是干貝絲,我自己也很推直上這個版本。 配料有洋蔥、蔥、低溫豬肉叉燒、溏心蛋,溏心蛋溏心是膏狀的呈現。 麵體預設是比較軟一點,但是還是保有一點口感。 我自己覺得清湯這樣的軟硬度比較剛好適中,讓吃麵的流暢和整體感受比較一致。 ▎日式乾擔擔麵+炸雞: 擔擔麵的配料很豐富,有:叉燒丁、洋蔥、菜絲、生蛋黃、蔥、海苔、蒜酥、高麗菜。 麵量很足夠,而且一開始麵條上已經沾滿醬汁了,我自己很喜歡這樣。 不用拌就可以直接吃,雖然我還是習慣會拌勻才開始吃。 麵條軟硬度適中,可以很順口的一直吃。 然後真的會有一點點辣,所以吃到中間身子都開始熱起來! 味道是有辣油的香氣和醬油的味道交織出這碗,而其他配料則是點綴轉換的角色,桌上也有花椒的調味料可以使用改變味道。 炸雞蠻大一塊的,肉很嫩且內含有肉汁。 旁邊有附上美乃汁可以沾來使用,菜絲也可以配合著一起。 ▎壹之雞: 湯的濃稠度還沒到稠狀,但是味道的厚度上是有的。 一入口的味道是很明顯的奶味,接著才是雞湯甘醇的香氣湧現。整體很順口,所以這碗我就選擇見碗底了! 不過最後只剩下湯的時候,我撒一點花椒粉上去真的很像玉米濃湯。 麵體我選細麵,麵體硬度上剛好。 跟湯的搭配上協調,不會有分離的感受。 溏心蛋也是在水準上,溏心的呈現是我最愛的口感。 配料的洋蔥丁味道些微嗆辣,我覺得是這碗小可惜的地方破壞了這碗的協調,如果可以改善就整體會一致。 低溫雞肉叉燒的口感非常好吃,嫩中帶有脆的口感很棒! 不過味道上可能處理上有一點狀況,三片的味道都略有些不同也反應給店主了,不然可惜了這好的口感。 另外我自己覺得這碗是很溫和的一碗,但是少了會讓人有記憶的味道;如果低溫雞肉的味道如果不那麼保守,或許是一個味道轉換和亮點也說不定。 除了一些小缺點外,整體來說是一碗我覺得有水準的雞白湯!尤其在目前台北雞白湯戰場的時代,這碗我自己是會放在首選名單內。 ▎醬油拉麵: 這碗醬油其實也改良了好無數次,而這次吃的味道真的讓我喜歡;許久之前吃的時候,醬油有一個魚臭味其實我個人很不愛那個味道... 但是這次吃的時候,湯色是很美外透亮且味道上組合了醬油香和柴魚的味道與香氣,這碗也是會讓我想把湯喝完的一碗,所以這次就見了碗底。 麵的軟硬度也抓的很OK,搭配這碗的湯很剛剛好。 叉燒肉很嫩且好吃,半顆溏心蛋也滿意,如果想要吃整顆和多肉再加40即可。 99這樣一碗呈現對我自己來說,可以解拉麵癮又有肉有蛋,滿足阿~ ▎豚骨魚介: 這碗濃度我選濃,湯的濃稠度有到,但是味道上卻跟不上。 魚介味道明顯,但是湯頭的鹹度沒有跟上的話有一種說不出的感覺要上不下的,這是我覺得比較可惜的地方。 而事後煮麵的師傅跟我們聊味道後,說這樣的味道都是近期調整過後的。說之前鹹度上比較高,但是近期的客人都吃不慣所以才調整成現在這個樣子。 現在的味道是目前的客人可以接受的。 除了湯頭外,肉很軟嫩且有兩大塊。 溏心蛋的溏心很棒,跟近期開幕的沾麵店一樣。 麵體我選擇細麵麵硬,口感保有齒切感。 因為細麵又濃湯的關係,所以麵會比較容易快軟,建議選濃的麵友粗麵會比較推薦。 ▎壹の二郎+煙燻鴨胸: 煙燻鴨胸是最近180的老王和新買的烤箱相處研發許久的驕傲品項,目前只有本店有提供! 所以我也來點看看多神~ 許久不見二郎山,麵上來的氣勢還是如此狂妄! 要壓倒想征服這座山的麵友不要怕,按照節奏走一定可以順利爬完。因為有點高,所以有要了一個小碗裝配料。 二郎要吃盡量先吃肉、蛋,因為這些留在最後很容易因為飽足感而吃不下。建議直接先吃掉,所以我一開始就先吃了溏心蛋再來就是叉燒。 溏心蛋這次很愛,是我喜歡的膏狀帶著液狀,超棒~ 鴨肉叉燒口感很棒,而且沒有我討厭的鴨肉特有的腥臭味,不過比較可惜的是煙燻味道沒有很明顯。 撇除這個之外,口感軟嫩好咬不卡縫也沒有和皮分離,老王跟烤箱相處這樣的成品可以! 豬肉叉燒一樣維持的很好,軟嫩好入口。 吃完這些後,因為怕麵軟掉,所以一開始一定要使出[天地返]讓底下的麵重見光明! 之後就開始一直吃一直吃,麵體軟硬度剛好,豆芽菜也沒有討厭的菜味道。湯是招牌的豚骨魚介,而且味道很濃且重,搭配這大量的麵和豆芽剛剛好~ 旁邊也有附上蒜泥可以再拌入使用,桌上的調味料花椒粉也可以搭配著。 吃好吃滿吃爽,就是這碗麵最好的註解。:D ▎醬油拉麵+蔥+脆皮叉燒+叉燒飯(小)+豆芽菜: 之前開始弄調理包和自己切蔥後,現在去拉麵店都會想要點蔥來加。(笑 醬油的部分,我是選擇味濃,所以醬油的味道會比較明顯,此外就是魚介的香氣。 叉燒我有加點脆皮叉燒,這是壹之穴的叉燒中最新的品項。 皮厚實且很酥脆好吃,喜歡這樣類型的的叉燒推薦點來吃看看。 叉燒軟嫩好吃,溏心蛋呈現膏狀帶點液體且入味。 滿滿的豆芽菜單點也有醬油調味,而且量很足,蠻爽的~ 叉燒飯不用多說就是,上面的叉燒丁大塊且香氣足。 旁邊還有美乃滋的酸甜加上淋在上頭醬底的醬油香,很涮嘴好吃!

I think the sous-vide meat is the most unique part of this restaurant. I'm very impressed by the meat, basically, outshines ramen itself. If you are into a different kind of ramen experience, this is the place. You order using a machine, which is quite convenient for introverted customers. Even though I understand when I was dining there, they were quite busy, but I hope they could improve a bit on their service, as in filling the pitch of water. Yet, overall, they are very nice! Also, it's usually this place is crowded, so quite likely there will be a line, or at least you'd have to wait a bit!

★拉麵迷請進→FB搜尋:『台灣拉麵愛好會』、IG:twramenclub 店家不斷的用心在進化努力,基本盤穩定且不斷的嘗試新方向! 不論是麵還是態度都很棒! 除了主打的豚骨魚介外,雞白湯和煮干也是店家的強打~ 另外醬油拉麵和叉燒飯是好吃大碗又滿意的好選擇!:D ▎秋刀魚醬油干貝醬拉麵: 秋刀魚這款有兩種版本,就是差異在有沒有干貝醬。 參考麵友的食記說有干貝醬比較多層次風味,所以我也就直上這款了! 這碗我覺得碗的顏色選擇有點可惜,因為黑碗的關係根本看不出湯的顏色,視覺上稍嫌可惜了一點。 湯的味道有別於定番,多了秋刀魚帶出的特有風味,佐上干貝醬帶出的干貝鮮甜,蠻順口的!而且干貝的量蠻多的,碗底不少,最後幾口幾乎都是干貝絲,我自己也很推直上這個版本。 配料有洋蔥、蔥、低溫豬肉叉燒、溏心蛋,溏心蛋溏心是膏狀的呈現。 麵體預設是比較軟一點,但是還是保有一點口感。 我自己覺得清湯這樣的軟硬度比較剛好適中,讓吃麵的流暢和整體感受比較一致。 ▎日式乾擔擔麵+炸雞: 擔擔麵的配料很豐富,有:叉燒丁、洋蔥、菜絲、生蛋黃、蔥、海苔、蒜酥、高麗菜。 麵量很足夠,而且一開始麵條上已經沾滿醬汁了,我自己很喜歡這樣。 不用拌就可以直接吃,雖然我還是習慣會拌勻才開始吃。 麵條軟硬度適中,可以很順口的一直吃。 然後真的會有一點點辣,所以吃到中間身子都開始熱起來! 味道是有辣油的香氣和醬油的味道交織出這碗,而其他配料則是點綴轉換的角色,桌上也有花椒的調味料可以使用改變味道。 炸雞蠻大一塊的,肉很嫩且內含有肉汁。 旁邊有附上美乃汁可以沾來使用,菜絲也可以配合著一起。 ▎壹之雞: 湯的濃稠度還沒到稠狀,但是味道的厚度上是有的。 一入口的味道是很明顯的奶味,接著才是雞湯甘醇的香氣湧現。整體很順口,所以這碗我就選擇見碗底了! 不過最後只剩下湯的時候,我撒一點花椒粉上去真的很像玉米濃湯。 麵體我選細麵,麵體硬度上剛好。 跟湯的搭配上協調,不會有分離的感受。 溏心蛋也是在水準上,溏心的呈現是我最愛的口感。 配料的洋蔥丁味道些微嗆辣,我覺得是這碗小可惜的地方破壞了這碗的協調,如果可以改善就整體會一致。 低溫雞肉叉燒的口感非常好吃,嫩中帶有脆的口感很棒! 不過味道上可能處理上有一點狀況,三片的味道都略有些不同也反應給店主了,不然可惜了這好的口感。 另外我自己覺得這碗是很溫和的一碗,但是少了會讓人有記憶的味道;如果低溫雞肉的味道如果不那麼保守,或許是一個味道轉換和亮點也說不定。 除了一些小缺點外,整體來說是一碗我覺得有水準的雞白湯!尤其在目前台北雞白湯戰場的時代,這碗我自己是會放在首選名單內。 ▎醬油拉麵: 這碗醬油其實也改良了好無數次,而這次吃的味道真的讓我喜歡;許久之前吃的時候,醬油有一個魚臭味其實我個人很不愛那個味道... 但是這次吃的時候,湯色是很美外透亮且味道上組合了醬油香和柴魚的味道與香氣,這碗也是會讓我想把湯喝完的一碗,所以這次就見了碗底。 麵的軟硬度也抓的很OK,搭配這碗的湯很剛剛好。 叉燒肉很嫩且好吃,半顆溏心蛋也滿意,如果想要吃整顆和多肉再加40即可。 99這樣一碗呈現對我自己來說,可以解拉麵癮又有肉有蛋,滿足阿~ ▎豚骨魚介: 這碗濃度我選濃,湯的濃稠度有到,但是味道上卻跟不上。 魚介味道明顯,但是湯頭的鹹度沒有跟上的話有一種說不出的感覺要上不下的,這是我覺得比較可惜的地方。 而事後煮麵的師傅跟我們聊味道後,說這樣的味道都是近期調整過後的。說之前鹹度上比較高,但是近期的客人都吃不慣所以才調整成現在這個樣子。 現在的味道是目前的客人可以接受的。 除了湯頭外,肉很軟嫩且有兩大塊。 溏心蛋的溏心很棒,跟近期開幕的沾麵店一樣。 麵體我選擇細麵麵硬,口感保有齒切感。 因為細麵又濃湯的關係,所以麵會比較容易快軟,建議選濃的麵友粗麵會比較推薦。 ▎壹の二郎+煙燻鴨胸: 煙燻鴨胸是最近180的老王和新買的烤箱相處研發許久的驕傲品項,目前只有本店有提供! 所以我也來點看看多神~ 許久不見二郎山,麵上來的氣勢還是如此狂妄! 要壓倒想征服這座山的麵友不要怕,按照節奏走一定可以順利爬完。因為有點高,所以有要了一個小碗裝配料。 二郎要吃盡量先吃肉、蛋,因為這些留在最後很容易因為飽足感而吃不下。建議直接先吃掉,所以我一開始就先吃了溏心蛋再來就是叉燒。 溏心蛋這次很愛,是我喜歡的膏狀帶著液狀,超棒~ 鴨肉叉燒口感很棒,而且沒有我討厭的鴨肉特有的腥臭味,不過比較可惜的是煙燻味道沒有很明顯。 撇除這個之外,口感軟嫩好咬不卡縫也沒有和皮分離,老王跟烤箱相處這樣的成品可以! 豬肉叉燒一樣維持的很好,軟嫩好入口。 吃完這些後,因為怕麵軟掉,所以一開始一定要使出[天地返]讓底下的麵重見光明! 之後就開始一直吃一直吃,麵體軟硬度剛好,豆芽菜也沒有討厭的菜味道。湯是招牌的豚骨魚介,而且味道很濃且重,搭配這大量的麵和豆芽剛剛好~ 旁邊也有附上蒜泥可以再拌入使用,桌上的調味料花椒粉也可以搭配著。 吃好吃滿吃爽,就是這碗麵最好的註解。:D ▎醬油拉麵+蔥+脆皮叉燒+叉燒飯(小)+豆芽菜: 之前開始弄調理包和自己切蔥後,現在去拉麵店都會想要點蔥來加。(笑 醬油的部分,我是選擇味濃,所以醬油的味道會比較明顯,此外就是魚介的香氣。 叉燒我有加點脆皮叉燒,這是壹之穴的叉燒中最新的品項。 皮厚實且很酥脆好吃,喜歡這樣類型的的叉燒推薦點來吃看看。 叉燒軟嫩好吃,溏心蛋呈現膏狀帶點液體且入味。 滿滿的豆芽菜單點也有醬油調味,而且量很足,蠻爽的~ 叉燒飯不用多說就是,上面的叉燒丁大塊且香氣足。 旁邊還有美乃滋的酸甜加上淋在上頭醬底的醬油香,很涮嘴好吃!

I think the sous-vide meat is the most unique part of this restaurant. I'm very impressed by the meat, basically, outshines ramen itself. If you are into a different kind of ramen experience, this is the place. You order using a machine, which is quite convenient for introverted customers. Even though I understand when I was dining there, they were quite busy, but I hope they could improve a bit on their service, as in filling the pitch of water. Yet, overall, they are very nice! Also, it's usually this place is crowded, so quite likely there will be a line, or at least you'd have to wait a bit!
