My favourite night out in Taiwan!
I had been to some wonderful bars during my stay last year, but found many seemed to have a focus on Japanese gins. Although Ki No Bi is wonderful, I was eager to try Taiwanese gins. Gin Mind did not disappoint, with a number of really special local gins, including their own. The owner was passionate and very attentive, and the staff were truly impressive. I was able to get a good understanding of the botanicals and essences, and concepts behind the cocktails and food.
Luckily their English was much better than my Chinese!
The cocktails are delicious and inventive. Aviation was a standout, balancing the sweet, sour, floral and herbal perfectly. Even the cherry was remarkably perfect.
The last thing I remember is the corpse reviver… Then it was the next day.

在步入 Gin Mind 之前,原先以為只是一間別緻的酒館,直到真的喝了調酒之後,才發現每一杯都充滿故事。在琳瑯滿目的酒單中,要不陷入選擇困難基本上是不可能的事,好不容易從中點了第一杯酒後,bartender 會先遞上一杯充滿花香和四季春風味的無酒精氣泡調飲,當你重新洗滌味蕾的同時,宣告今宵良夜從此正式開始。
Round 1: No.1 Gin Tonic 花香/哈蜜瓜/高山茶/冰淇淋汽水 $320
有別於經典 Gin Tonic 著重在琴酒與通寧水風味的調和,Gin Mind 的 Gin Tonic 明顯多了豐富層次,首先灌入鼻腔的是清新的花香和哈密瓜香氣,靜靜啜飲一口,高山茶的甘甜餘韻在口中散發開來,氣泡口感搭配原有的甜香味,竟在味蕾中巧妙勾兌出兒時冰淇淋汽水的風味。
bartender 出色的手法,不僅將經典 Gin Tonic 勾兑出不同風味,更成功混淆感官,帶來耳目一新的體驗。
Round 2: 經典老回憶 煙燻/紅茶/香料/杏仁/蜂蜜/巧克力 $400
靈感來自老闆的兒時回憶,將老闆放學後歸途中穿過鄉間步道、拎著古早味紅茶和杏仁糖,以及沿途街道兩旁木材業者燒製的檜木香氣,同時以酒感偏重的經典調酒「教父」為基底,調和成這杯「經典老回憶」。
原先盛裝在塑膠袋裡古早味紅茶,搖身一變成了經典老回憶調酒,這對於有點年紀的酒客來說,無非是一種回憶殺,塑膠袋盛裝的調酒,彷彿在追悼回不去的童年,以紅茶茶葉浸泡在琴酒裡勾兌而成的基底,搭配巧克力、杏仁與蜂蜜的醇厚酒感,從塑膠袋裡飄出的檜木香氣,是老闆與資深酒客們無可取代的兒時回憶。
Round 3: 夜空 紫羅蘭/茉莉花/荔枝/西洋梨/白葡萄 $380
夜空是什麼顏色呢?在 Gin Mind 裏的夜空,不是伸手不見五指的黑,更不是皎潔月光照亮的夜,而是絢麗、繽紛且富有層次的紫。
為夜空外型慕名而來的少女,總為它迷人的外型與濃郁的花香所折服,卻忘了藏在良夜裡,26%+ 以上的酒精濃度多麽有距離感,但唯有細細品嚐,你才能感受夜空多層次的美。
以來自西班牙的北大西洋加利西亞琴酒(Nordés Atlantic Galician Gin)作為基底,撲鼻的茉莉與紫羅蘭香氣中帶有紅色莓果軟糖的酸甜感,正是這股濃郁的花香和充滿熱情的軟糖酸甜感,著實讓我卻步半晌。
但就在時間的催化,曾因第一口沁鼻的花香與甜感備感後悔的我,在靜置 5~10 分鐘後,竟慢慢品出藏在夜空裡的沁人、清新茉莉花香,將靜謐的夜空揭開另一層風貌。
直到啜飲結束,停留在鼻腔的白葡萄餘韻和香氣仍不斷迴盪,每次深呼吸、吐息,都彷彿浸淫在白葡萄的氣息當中,久久不能散去。
貪杯的我也不禁為了夜空的浩瀚停下腳步,任它的璀璨靜靜滲透感官,直到我在這片紫色的夜空裡盡情徜徉。
這是一杯值得靜置、細細品嚐的酒飲,每一個時間段,你都能感受到夜空不一樣的美,如果不勝酒力的酒客,非常建議待靜置之後,隨著冰塊融化之際,感受夜空的不同層次。
Round 4: 馬丁尼 $350
自從 James Bond ,馬丁尼便成為調酒界的經典,點酒時最好再加上一句帥氣的"Shaken and not stirred." 琴酒的杜松子香氣與苦艾甜酒的草本氣息不謀而合,為良夜畫上餘韻無窮的句點。
