The process of booking was difficult, but we were lucky enough to be seated at the bar inside ergo no mosquito bites or heat. We arrived early and were fortunate enough to be pushed ahead and seated immediately. The whole experience in the restaurant is quite friendly and professional. The process of becoming "usual customer" is interesting as they have a few hurdles for you to get points which work towards the possibility to gain the right to "walk in" service without any prior reservation. First of all, my flight to Taiwan was delayed and I was going to miss my booking. I sent a dm on Instagram and they promptly shifted my reservation time to accommodate me ! This was a huge plus point as quite a big amount was paid upfront as a deposit (NT$400 per person).
We tried 1 classic beef noodle with thin noodles and 1 麻辣(spicy) beef noodle with thick noodles. As someone that loves spice, the spicy broth hits the spot just right and I finished the whole bowl of soup ! The noodles were chewy but there was only 1 slice of meat. Of course there was a beef tendon given as well as some daikon but for the price paid I wish there was more than one slice of meat.

The soup today is day 686, you can taste the rich flavors and the collagen fills your mouth. Beef was very tender, carrot and radish was soft. Noodle was cooked perfectly al dente the way I like. Very hard to make a reservation I was lucky enough to have a friend who made the reservation 7 months ago. The wait may be long but the soup itself is very unique. Looking forward to the next visit to see how the soup have evolved over time.
