小李子蘭州牛肉拉麵館 — Restaurant in Taipei

This is the first 蘭州拉麵 style noodle place I’ve been to in Taiwan. As expected, the hand pulled noodle is excellent, it was, unfortunately, over cooked. It was way too soft and lost its advantage of being hand pulled. The beef was very soft and tasty, but the tendons were very hard to chew. The soup isn’t normal Taiwan beef noodle style and uses plenty of spice. I did enjoy it but I’m not sure it’s for everyone. 1️⃣ 牛雜湯麵

色：湯色紅潤帶透明油光，辣油浮面但不過厚重，搭配蔥花與芝麻點綴，觀感相當誘人。

香：辣香明顯，但藥膳味偏淡，少了傳統蘭州湯底的那股「藥香回甘」。

味：牛雜處理得宜，口感有層次，有筋、有肉、有肚，皆入味。湯頭整體風味偏「台式清香」，沒有典型蘭州牛肉湯那種濃厚底蘊，適合初嘗者，但對老饕來說少了記憶點。

麵條：是此碗最大亮點，寬而不厚，Q彈富有延展性，吸附湯汁能力優異，完美支撐主體。

2️⃣ 乾拌牛雜麵

色香：油亮誘人，配料給得大方，蔥花與芝麻畫龍點睛。

味：拌醬鹹香濃郁但偏重口，若無搭配清湯或開水，容易感覺味蕾疲勞。建議醬汁可酌減油鹽比。

口感：麵條與牛雜口感一致地好，仍是麵體品質撐起整體水準的一道。

3️⃣ 豬肋排湯麵

色香：湯色清亮，油花浮動自然，視覺印象不俗。

● 滷豬耳朵

口感Q脆、膠質豐富，滷製時間恰當，鹹香適中，無腥味。

表皮入味、色澤紅潤，口感滑順，但因體積小隻，咬勁不足、略偏軟。

💬 綜合評論

「小李子蘭州拉麵」在麵體製作上展現極佳功夫，無論湯麵或乾拌皆有水準，特別是寬麵彈性佳、耐泡不爛，是招牌主力。小菜份量不多，但味道實在，是很好的搭配補強。湯頭方面則稍顯保守，未能呈現蘭州拉麵傳統中藥香氣與鮮明的「一清二白三紅四綠五黃」特色。乾拌系列需調整鹹度以利平衡。
