Here's the deal. It's ok, but...

...But the chef doesn't really speak a part from introducing each fish.

...But I would have preferred a bit more background about his choice in a local (& non-traditional) ingredient over a classic fish.

...But there is Taiwanese kumquat on/in every dish. Aren't there other local citrus fruits to use? The beautiful island he wants to represent has so much other fruit no....? (Dined in August 2022, I'm not sure if his menu changes often...)

...But one of my sushi dishes had tiny bones... Err... Were they supposed to be there? The world may never know.

...But now I have a gross fishiness in my mouth an hour after finishing. Not enjoying it.

It's definitely non-traditional. So the chef should do more to explain his thinking and why we are eating everything as it is. Instead he was silent from start to finish.

I love that he was trying to celebrate local, but it left me wanting more...

Mabe I'm a sushi classicist, overall this place was not...

Honestly this is not my favorite but the CP value is amazing. For lunch there's 2 slots, 11:30am or 1pm. The chef barely interacts with you but he does introduce the dishes. It's more like a taiwanese fusion using mostly taiwanese fish and some imported japanese fish. The clientele (at least on the day I was here) is more.....local, with loud talking and constant burping from this lady next to me. Table manners were a bit lacking on the day I was here. There's a cell phone stand on the table which is very puzzling to me. A lot of the sushi I felt like wasnt supposed to be sushi, but would be nice as cooked fish. I would call it non conventional and the chef really has his distinct style. There's a lot of citrus (kumquat juice) on the sushi dishes which was not my favorite either. The tempura was oily but fine. It's just not very refined. But again really good value for a...

店內採預約制,新顧客一般都只能點到1280的套餐,之後才能點更高一級的套餐。當時在粉絲團看,有些等級的餐要先付訂金。用餐當天會來電確認是否會到,來電的時間約莫在用餐時間前三個小時。個人認為滿不方便的,以午餐來說,那個時間絕大多數人都在梳妝或是忙,不一定能接到電話。我當天是在收訊不好的地方沒接到,後來才回傳訊息確認會去,我認為其實用訊息溝通已經足夠。 用餐那天相對熱,而且疫情還在醞釀,沒有什麼人。與我鄰座用餐的是一名女士帶著大約三歲的小孩,小孩偶爾會踢腿踢到吧檯,但沒有太多吵鬧。除了客人外,用餐前只看得到負責帶位的服務生。 餐點方面的確有很多道,是屬於cp值較高的無菜單壽司料理。以下依照餐點順序給予評價: 配菜的洋地瓜有用紫蘇醃漬過,吃起來略帶梅酒味,口感清脆好似青森蘋果,但是澱粉的口感更為厚實;生薑偏甜。我會想要一直吃洋地瓜,也很解膩。熱茶應該是煎茶,不過過程中沒有什麼需要喝,餐點來之前,和用餐完後才想到要喝一兩口。 蜆精:蜆精溫溫熱熱的,雖然沒有很濃郁,但也沒有腥味,開胃進入生食類的開胃菜。 澎湖軟絲佐醋味噌:醋味噌味道典雅,尾韻帶點甜味。醋味噌的醋量只用於提味,不會刺鼻也不會搶走味噌的味道。軟絲本身有些彈性,咀嚼幾口醋味噌的味道淡去後也還吃得到鮮甜味,我喜歡這道。 大分縣鰹魚:魚肉下面有些昆布,上面的則是洋蔥醬跟櫻桃蘿蔔。主角魚肉本身厚實,肉味濃厚,不知道是否有經過幾天熟成?洋蔥醬味道很不錯,我是喜歡和昆布一起吃,鹹鹹甜甜的味道很有層次,鰹魚本身就很好吃了。 澎湖軟絲:軟絲但是是生的。上面撒了一些柑橘類的皮,算是味道上的一點點綴。軟絲有割痕但入口還是很Q彈,咀嚼後也會有綿密濃厚的口感。 島根縣真鯛:鯛魚的筋滿妨礙口感的,味道很淡,飯的味道居多,到入口後才有一點點的鮮味。 北海道角鰈:上面的鹽昆布很巧妙。角鰈本身味道偏淡又沉,也略有腥味,鹽昆布一來增添風味二來降低腥味感。在吃這貫的時候不知道為什麼感覺飯特別溫熱。 鹿兒島鰤魚(青魽):我是很喜歡鰤魚的人,但是可能是春夏交接之際,鰤魚並沒有什麼油脂。不過魚肉其實算滑嫩,還不錯。 北海道干貝:一樣有柑橘味點綴的料理方式。在口裡翻攪有濃稠的口感。我原先看到柑橘皮時以為是要中和海的鮮味,但是其實味道滿淡的有點可惜,上面的醬味較為突出。 千葉縣白魽(島鰺):有著白肉魚的清新和略脆的口感,沒太多的形容詞,是好吃的。 星鰻茶碗蒸:醬汁略帶點辛辣味,還滿有趣的滋味,問了一下是有山芹菜的關係。 醃漬長崎鮪魚:上方用了些黃芥末作搭配,鮪魚口感紮實且鹹味很明顯,的確需要黃芥末作為中和。 大分縣鯖魚手卷:很好吃的一道,鯖魚烤至半熟,香氣逼人卻又不會乾柴。薑和山葵的量很嗆當,能襯托出魚肉的味道又不會嗆。 長崎鮪魚大腹:非常驚人!送入口中瞬間爆出大量的肉汁和脂肪。雖然肉本身帶點筋,但在肉質這麼柔軟的情況下不會妨礙品嘗,是可接受的。滿口的鮮味不會散去,持續很長一段時間。 海洋四重奏:店家的主打,然而我不太喜歡。不是食物不好吃而是讓我頗失望。原以為會是奢華層層疊加的美味,入口以後發現味道都混在一起了。魚子醬海膽鮪魚碎甜蝦的組合,實際感受卻大部分都是甜蝦。每樣其實都是不錯的,但是一來很難分開吃,二來甜蝦味道濃郁到感受不到其他部分。接在鮪魚大腹後很尷尬,說實在我更希望將這貫換成鯖魚手卷,一樣都要用手拿至少還不會灑落。 烤真鯛腹:金桔和醃漬蓮藕的組合不錯,魚肉肉質細嫩又有烤過的香味,搭配酸又有口感金桔蓮藕層次較為豐富。 厚蛋燒:用魚漿和山藥做的,感受不出有魚的味道不知道是好事還壞事,但我吃過和長崎蛋糕完全不同味道的玉子燒,我覺得這個我不是很喜歡。 先前我有找些資料,聽說店內的醋用的是紅醋。好奇偏江戶前的做法,所以決定來吃看看。吃過以後並不會如想像中的那麼酸,反而在一些味道較淡的魚肉還能提升整體的滋味,我還滿喜歡的。 我有幾點要提出: 1. 有人反映師傅都不和客人互動,放完一貫就進廚房。這是事實但我覺得沒有什麼問題,我不會討厭這樣。 2.用餐進度非常快,只過了半小時就上了7成(13道)的菜色。我本身是消化不好的人,這讓我覺得壓力很大。不想干預師傅的節奏但是明明用餐時段有90分鐘,卻這麼趕。從入店到離店,包含等待時間只有一小時。 3.1280的套餐定位在較為平價、CP值高的取向,有這樣的食物等級算是難得。如果拿掉海鮮四重奏是否有更多的空間調整其他道料理?我很喜歡這間店經過熟成的肉,做得很好滋味豐富。但是魚種有重複的,而且海鮮四重奏的表現不突出讓我覺得有點可惜。

I have always wonder that why they choose to open in Wanhua. Perhaps this is because the rent is lower then the other district? So they give it back to the customers… For fresh and good-quality dinner, corkage and tips are free, which is absolutely valuable! The restaurant atmosphere is not very high, and the service is not star-rated. But they do the best that should have been done. Delicious and I had a wonderful time this night. I have no reason do not give my five stars.

店內採預約制,新顧客一般都只能點到1280的套餐,之後才能點更高一級的套餐。當時在粉絲團看,有些等級的餐要先付訂金。用餐當天會來電確認是否會到,來電的時間約莫在用餐時間前三個小時。個人認為滿不方便的,以午餐來說,那個時間絕大多數人都在梳妝或是忙,不一定能接到電話。我當天是在收訊不好的地方沒接到,後來才回傳訊息確認會去,我認為其實用訊息溝通已經足夠。 用餐那天相對熱,而且疫情還在醞釀,沒有什麼人。與我鄰座用餐的是一名女士帶著大約三歲的小孩,小孩偶爾會踢腿踢到吧檯,但沒有太多吵鬧。除了客人外,用餐前只看得到負責帶位的服務生。 餐點方面的確有很多道,是屬於cp值較高的無菜單壽司料理。以下依照餐點順序給予評價: 配菜的洋地瓜有用紫蘇醃漬過,吃起來略帶梅酒味,口感清脆好似青森蘋果,但是澱粉的口感更為厚實;生薑偏甜。我會想要一直吃洋地瓜,也很解膩。熱茶應該是煎茶,不過過程中沒有什麼需要喝,餐點來之前,和用餐完後才想到要喝一兩口。 蜆精:蜆精溫溫熱熱的,雖然沒有很濃郁,但也沒有腥味,開胃進入生食類的開胃菜。 澎湖軟絲佐醋味噌:醋味噌味道典雅,尾韻帶點甜味。醋味噌的醋量只用於提味,不會刺鼻也不會搶走味噌的味道。軟絲本身有些彈性,咀嚼幾口醋味噌的味道淡去後也還吃得到鮮甜味,我喜歡這道。 大分縣鰹魚:魚肉下面有些昆布,上面的則是洋蔥醬跟櫻桃蘿蔔。主角魚肉本身厚實,肉味濃厚,不知道是否有經過幾天熟成?洋蔥醬味道很不錯,我是喜歡和昆布一起吃,鹹鹹甜甜的味道很有層次,鰹魚本身就很好吃了。 澎湖軟絲:軟絲但是是生的。上面撒了一些柑橘類的皮,算是味道上的一點點綴。軟絲有割痕但入口還是很Q彈,咀嚼後也會有綿密濃厚的口感。 島根縣真鯛:鯛魚的筋滿妨礙口感的,味道很淡,飯的味道居多,到入口後才有一點點的鮮味。 北海道角鰈:上面的鹽昆布很巧妙。角鰈本身味道偏淡又沉,也略有腥味,鹽昆布一來增添風味二來降低腥味感。在吃這貫的時候不知道為什麼感覺飯特別溫熱。 鹿兒島鰤魚(青魽):我是很喜歡鰤魚的人,但是可能是春夏交接之際,鰤魚並沒有什麼油脂。不過魚肉其實算滑嫩,還不錯。 北海道干貝:一樣有柑橘味點綴的料理方式。在口裡翻攪有濃稠的口感。我原先看到柑橘皮時以為是要中和海的鮮味,但是其實味道滿淡的有點可惜,上面的醬味較為突出。 千葉縣白魽(島鰺):有著白肉魚的清新和略脆的口感,沒太多的形容詞,是好吃的。 星鰻茶碗蒸:醬汁略帶點辛辣味,還滿有趣的滋味,問了一下是有山芹菜的關係。 醃漬長崎鮪魚:上方用了些黃芥末作搭配,鮪魚口感紮實且鹹味很明顯,的確需要黃芥末作為中和。 大分縣鯖魚手卷:很好吃的一道,鯖魚烤至半熟,香氣逼人卻又不會乾柴。薑和山葵的量很嗆當,能襯托出魚肉的味道又不會嗆。 長崎鮪魚大腹:非常驚人!送入口中瞬間爆出大量的肉汁和脂肪。雖然肉本身帶點筋,但在肉質這麼柔軟的情況下不會妨礙品嘗,是可接受的。滿口的鮮味不會散去,持續很長一段時間。 海洋四重奏:店家的主打,然而我不太喜歡。不是食物不好吃而是讓我頗失望。原以為會是奢華層層疊加的美味,入口以後發現味道都混在一起了。魚子醬海膽鮪魚碎甜蝦的組合,實際感受卻大部分都是甜蝦。每樣其實都是不錯的,但是一來很難分開吃,二來甜蝦味道濃郁到感受不到其他部分。接在鮪魚大腹後很尷尬,說實在我更希望將這貫換成鯖魚手卷,一樣都要用手拿至少還不會灑落。 烤真鯛腹:金桔和醃漬蓮藕的組合不錯,魚肉肉質細嫩又有烤過的香味,搭配酸又有口感金桔蓮藕層次較為豐富。 厚蛋燒:用魚漿和山藥做的,感受不出有魚的味道不知道是好事還壞事,但我吃過和長崎蛋糕完全不同味道的玉子燒,我覺得這個我不是很喜歡。 先前我有找些資料,聽說店內的醋用的是紅醋。好奇偏江戶前的做法,所以決定來吃看看。吃過以後並不會如想像中的那麼酸,反而在一些味道較淡的魚肉還能提升整體的滋味,我還滿喜歡的。 我有幾點要提出: 1. 有人反映師傅都不和客人互動,放完一貫就進廚房。這是事實但我覺得沒有什麼問題,我不會討厭這樣。 2.用餐進度非常快,只過了半小時就上了7成(13道)的菜色。我本身是消化不好的人,這讓我覺得壓力很大。不想干預師傅的節奏但是明明用餐時段有90分鐘,卻這麼趕。從入店到離店,包含等待時間只有一小時。 3.1280的套餐定位在較為平價、CP值高的取向,有這樣的食物等級算是難得。如果拿掉海鮮四重奏是否有更多的空間調整其他道料理?我很喜歡這間店經過熟成的肉,做得很好滋味豐富。但是魚種有重複的,而且海鮮四重奏的表現不突出讓我覺得有點可惜。

I have always wonder that why they choose to open in Wanhua. Perhaps this is because the rent is lower then the other district? So they give it back to the customers… For fresh and good-quality dinner, corkage and tips are free, which is absolutely valuable! The restaurant atmosphere is not very high, and the service is not star-rated. But they do the best that should have been done. Delicious and I had a wonderful time this night. I have no reason do not give my five stars.
