One of the few Korean restaurants in Taipei, I was quite satisfied with the quality of the stew, it was rich and flavorful. Though gochujiang (red pepper paste) is a pretty standard Korean soup base, the recipe appears to have been adjusted to suit the local Taiwanese market and the use of sesame was an unexpected "sweet" surprise.
Since the meat is from the spine, there is relatively little meat to bone, and the ratio of bone: protein is probably 4:1. I would like to have had the option for meatier cuts, for a more satisfying meal. I would then consider this more of a bone broth than a meaty stew.
