We ordered seven dishes from the north to middle to east. Naem Pla Tong, acquired taste, like a fermented fish ball, interesting. Roasted Chicken, taste like everywhere you can find in Issan restaurant Kao Gieb Namjim Goong, sorry I really cannot take the smell of bamboo shoots... Moo Cha Muang, this is a star in the all those seven dishes we had, sweet and mildly sour, you can really taste different layers of flavors and I love the story behind. Grandma of owner adapted the original menu to a less sweet and less fat version to her grandchildren for the health concern. Kannom Jin Sao Nam, I always enjoy kannom Jin, and this one comes with different condiments was even more fun and taste moderate. Pla Hedkon Tod Gratim, deep fried smsll sea fish until crisp and well seasoned, can eat from head to toe. Phak Chian Dah pad Kai, this is our all time favorite among Nothern menu. We had two tea infused mocktails, Cowa Cowa is softly bitter from the oolong and chamuang leaves, i really enjoyed it. Observed the team are passionate to make everything to perfect. We were a party of 11 persons, with an aged mother who couldn't climb the stairs to the table that was reserved for us upstairs. The team at the restaurant immediately re-arranged tables and chairs so that we could sit near the entrance, and even though we were blocking other guests arriving, it was okay for the team. What a great start to the dinner with such hospitality !
The dishes were cooked with freshest ingredients, and the marination and taste of every dish was refined, I have to say worthy of a Michelin restaurant, even though Ging Grai has not yet received this accolade (soon, I'm sure!)
We ordered so many dishes, and I can only remember the English translations, which really do not do justice to the actual Thai dish names.
Most notably, the Green Curry with fishballs was an amazing surprise, I am half-Thai so I have eaten alot of green curry -- this is the best ! What a surprise to find in Chiangmai.
The broth was nicely thick from the natural ingredients, and the blend of flavours was perfect.
The pork neck curry, and the fish paste were amazingly delicious. The gurmar vegetable fried with eggs is a must-try, as this vegetable is not commonly offered in restaurants.
The dessert was very innovative, black sticky rice deep-fried with a dip made from palm sugar ... so tasty, and light, unlike the unusually sweet and heavy desserts served by most restaurants.
The total bill was another surprise, so reasonable !
I see a very bright future for Ging Grai, destined to be one of the top restaurants in Chiangmai.

Nearby landmarks like Tom Ten Toh and Ginger Kitchen are great, but not as imaginative nor as note-perfect in execution as Ging Grai. (While I'm here, Hong Tauw Inn nearby is another classic, old interior restaurant yet to be invaded by YouTubers).
The menu is arranged geographically, with lots of Thai regional food that you seldom see outside of the regions, and in beautiful and impeccable versions.
Issan Som tom is the real deal, fish cakes from the Eastern Coast are in their best version, including those I've had on the Eastern Coast. We judge a place by their Tom Yum Gun, and this one is masterfully balanced in its citrus elements. (Also try the budget restaurant nearby, I Love Tom Yum Gun for a fish stock-based take).
Like the best Thai menu's, you will feel fairly tortured trying to pick from it.
Service is impeccable and sensitive to spice levels, I asked for a little more roasted rice powder and it was graciously provided in a little so we could see how it makes a laab a laab.
Mocktails were at 5* restaurant levels, we usually skip Thai desserts, but were again paralyzed by choice among the reinventions of Thai treats with it all on the right side of not being too sweet. The charity goods on sale are lovely.
I only leave maybe one restaurant review every other year, but this place deserves to be sold out every night...
