There are thousands of top tier restaurants in London. But there are not so many that can feed your soul in the way Caffe Bianco does. Nico puts his life into every dish he serves, and you can really tell. The flavors and textures are impossibly rich—every ingredient feels like the paragon of its kind. The most aromatic cheese. The brightest tomato. The most supple pasta. Nico wants the best for you, whether it’s your first time here or your 20th.
Don’t be alarmed when Nico says your pasta order will take 20 min to prepare. You would never rush an artist, right? And an artist he is. He’s makes your food keeping in mind how you’ll take every bite. Everything I’ve had at this place has been perfect, but the tortellini and mushroom pasta is especially dreamy.
If it’s not too busy, try to strike up a conversation with Nico. His commentary on how he’s prepared your food will make you smile—it brings to life how thoughtful he is. I’ve eaten here a couple times after rough weeks, and my experiences at this place always give me reassurance that there’s still good people out there. The rest of us can only hope to one day have the intense level of care and craft that Nico has. What more can a person offer to the world?
P.S. find a nice, lazy afternoon to go. Once you’re there you’ll...
