Coffee Or Tea
The coffee program at Grain Theory revolves around the idea of simple. The limited menu encourages our customers to enjoy coffee in its simplest form, using a variety of flavorful roasts, high quality milk, and brewing methods not typically seen in Abilene. We are partnering with Wonderstate Coffee (formerly Kickapoo Coffee Roasters) out of Viroqua, Wisconsin, to serve high quality drip coffee, espresso based drinks, cold brew, and slow pour coffee. We incorporate a series of rotating guest roasters from around the country, introducing our customers to many innovations of the coffee world. There is something at our Coffee Bar for everyone. Customers will be able to try new things and explore the basics of coffee in a new light.
Wine By The Glass Or Bottle
Our wine buyer, Charlie Clark, will source wines to match the quality of our beers. Charlie is a certified Cellar Manager through the International Wine and Spirits Guild, a Napa Valley and American Wine Expert through the Napa Valley Wine Academy, and a Champagne Masters candidate through the Wine Scholar Guild. Our list will include wines from quality minded producers not commonly found in Abilene. The Texas wine scene is blossoming with numerous fantastic producers from around the state, which will allow us to feature Texas wines by the glass (BTG) in addition to national and international wines from quality producers. With Charlie’s passion for bubbles, we will also have a diverse list of sparkling wine from Farmer Fizz to the best domestic producers to authentic champagne. Our unique event space will allow us to host wine education events and special tastings throughout the year
Upscale Bar Food
The frite reigns supreme! Bringing the Belgian frite stand to Abilene, the kitchen at Grain Theory cuts them thick, brines them overnight, and fries them twice for frites that are thicker, fluffier, and crispier than the traditional French fry. Frites are paired with a list of sauces made in-house and a menu that is both fun and creative. In addition to our authentic frites, our menu will include house made sausages, salads, grain bowls, and beer infused specialties. Our beer is about thoughtfully creating and molding that precious concoction that facilitates so many great stories and laughs, so many friendships, so many human connections. It's about forging that magnetic elixir around which people have naturally gathered to enjoy each other and savor life for thousands of years.In the age where most people spend much of their day online - where the majority of human social interactions are experienced through a phone screen - there is absolutely no substitute for gathering together around the table and having a couple pints. Grain Theory truly has the best espresso in Abilene! I've been there four times for business meetings already, and have been delighted with my amazingly consistently strong and flavorful espresso each time. The space is comfortable and inviting, and it isn't too loud or crowded during the day to prevent good conversation. I haven't tried any of their food or beer, I haven't been there in the evening, and the workers are still getting used to things, but for my purposes at least, this place is awesome!

EDIT: After a year and a half of being open, Grain Theory has become an integral part of my life and the Abilene community! There's something for everyone at any time of day -- whether it's my vegan sister, my carnivorous husband, picky-eater children, or my fancy-pants foodie self who likes caviar for breakfast. The food menu is relatively small, but the ingredients are high quality and the dishes are intriguingly creative with unique complex flavor combinations. They still have the best European-style espresso in town for morning or afternoon coffee meetings, an amazing assortment of herbal and black teas, and their rotating selection of excellent house-brewed beers, local mead, and good wine make for a delightful date night or celebratory event. They also occasionally have honey process coffee for java snobs! Over the past year and a half, they have created an atmosphere of outstanding culinary (and hoppy!) experimentation and community involvement and events that bring energy and liveliness to the whole Abilene scene....

This was my first dining experience in the quaint town of Abilene, Texas. It was a refreshing experience for such a well🌎 traveled person as myself. The location is great, being at the top level of a commercial building. I chose this place due to the seamless blend of indoor to outdoor seating. And also the fact that this is a "brewery, ☕️ shop and eatery." I do not drink alcohol, so I chose one of the more delightful 'Americano's' that I have tasted in a while. The gentlemen who took my order was very 'attentive' even though I was very inquisitive in my selection process. The line did build up, but he was unmoved by that. And he continued to guide me to my eating choices ' 2 piece 🐟 and 🍟.' When my ☕️ order was ready, they delivered it to my table. The buzzer system was in effect for the dining options. When I came to retrieve my entrees, I was directed by one of the 👨‍🍳 to the (3) categorical 🔥 sauces. Through continued conversation, I learned that this young man's family was from my state! The Great State of Michigan!!!! The outdoor dining experience was great, and the 🐟 was just as tasty! I did try the 🔥 🥵 sauce, and it was the truth. All in all, I want to thank my order taker and the 👨‍🍳's at Grain Theory for providing this well traveled 'City Slicker' one of my more "Pleasurable"...

A spectacular spot to go for a beer, wine, coffee, and even great food. The space itself is awesome. Open to the outdoors, inside tables, perimeter patio on the 2nd level with views of downtown streets. Really cool set up. The food menu is well above average with a good diversity of delicious apps and plates to pair with your drinks. I have not gotten their coffee yet on my visits but the wine and beer is truly worth trying out. David and Jeremy are two of the 3 owners I got to meet and chat with for a bit and they are amazing people doing some great stuff for their customers. The stuff they think up is just amazing. You see it in their beer and their food. I love the biltong as an appetizer and then the international sausage plate is a must in my book! The crudite plate is also a nice touch to pair with wine and beer of course. They have some kind of beer for every palate, even a picky beer person like me can be pleased. Even when busy this place has a good system for keeping orders coming out fast, you never wait too long for food to come out consistently good each time. Great place with good food and craft beer. Lots of seating indoor or outside on their balcony. We had the Biltong, pretzel bites and an order of the steak frites, all of which were very tasty. As for beers, I would highly recommend the King of Mars (double IPA) and Lunar Maria (stout). They also have a selection of wine, mead, cider, seltzers for those who like other adult beverages. For kids they also have a variety of table top games like connect four, tic tac toe, ring toss and shuffle board. Also on the day we visited, Grain Theory hosted a pop up book store with a variety of books. Though born in Abilene, I've lived in Houston for the past 20 years and it's great to see a business like this in downtown Abilene. If your in the area I would highly recommend stopping by for a bite to eat and a cold beer! Update for return visit: Absolutely great place! They now have a pour your own/beer wall which gives a good option for trying a variety of beers. Great spot in downtown Abilene. We stop every time we're in town!
