Grain Theory truly has the best espresso in Abilene! I've been there four times for business meetings already, and have been delighted with my amazingly consistently strong and flavorful espresso each time. The space is comfortable and inviting, and it isn't too loud or crowded during the day to prevent good conversation. I haven't tried any of their food or beer, I haven't been there in the evening, and the workers are still getting used to things, but for my purposes at least, this place is awesome! EDIT: After a year and a half of being open, Grain Theory has become an integral part of my life and the Abilene community! There's something for everyone at any time of day -- whether it's my vegan sister, my carnivorous husband, picky-eater children, or my fancy-pants foodie self who likes caviar for breakfast. The food menu is relatively small, but the ingredients are high quality and the dishes are intriguingly creative with unique complex flavor combinations. They still have the best European-style espresso in town for morning or afternoon coffee meetings, an amazing assortment of herbal and black teas, and their rotating selection of excellent house-brewed beers, local mead, and good wine make for a delightful date night or celebratory event. They also occasionally have honey process coffee for java snobs! Over the past year and a half, they have created an atmosphere of outstanding culinary (and hoppy!) experimentation and community involvement and events that bring energy and liveliness to the whole Abilene scene. Great place with good food and craft beer. Lots of seating indoor or outside on their balcony. We had the Biltong, pretzel bites and an order of the steak frites, all of which were very tasty. As for beers, I would highly recommend the King of Mars (double IPA) and Lunar Maria (stout). They also have a selection of wine, mead, cider, seltzers for those who like other adult beverages. For kids they also have a variety of table top games like connect four, tic tac toe, ring toss and shuffle board. Also on the day we visited, Grain Theory hosted a pop up book store with a variety of books. Though born in Abilene, I've lived in Houston for the past 20 years and it's great to see a business like this in downtown Abilene. If your in the area I would highly recommend stopping by for a bite to eat and a cold beer! Update for return visit: Absolutely great place! They now have a pour your own/beer wall which gives a good option for trying a variety of beers. Great spot in downtown Abilene. We stop every time we're in town!

I absolutely loved this place. It's refreshing, modern industrial atmosphere puts a wide gap between this and the old dull feel of many of the surrounding Abilene staples. The food is above average for a brew pub and I found my beer cheese macaroni balanced out the flavors of the wide variety of craft beers incredibly well. New brews are crafted in house as soon as what's available sells out and they seem to never have the same menu twice. This is welcome in a city filled with nothing but american light beers and standard imports. If I have one complaint it's that there seems to be a lack of darker ales available, with the menu mostly consisting of light ales and IPAs. But this is a personal preference and probably depends on what's available when you show up. That said, the horchata ale was dark, filling, and had just the right touch of cinnamon to round out a well balanced and delicious tasting. 10/10 will dine again

Must stop for beer fanatics. La Dolce Vita is a lovely tribute to Italian beers with a sweet finish, pizza oven needs to be a next step. Leadoff Lager is a ridiculously clean lager, this beer tells you the craft heavy brewmaster at work like no other beer on the menu. Nowhere to hide, light and an incredibly delicious beer. Hidden Agenda pulls heavy almost like a pale ale, lovely flavor. Kibosh Bock is also solid, I get cherry with the bread and caramel. Crudo is a nod to the healthier crowd, the rest of the menu is amazing and leaves you wanting to return. A wonderful tribute to that foodie destination, South Africa in quite a few of the dishes. Staff are beer and food educated and super helpful. Do yourself and your mouth a favor, drop in to this West Texas gem. I had to come back a week later to ensure it wasn’t a mistake! Definitely legit and for real. Get after it and visit.

Grain Theory was a great place for lunch. It was not busy at all at 11:15 am and it was never busy during my time there until 12:30 on Friday. It is a modern brewery pub with long picnic style seating throughout. It looked like there were a few places where you could have a 'private' table but for most of the seating, don't plan on a private conversation. They have balcony seating as well. I hear the beer here is really good but I personally can't speak about that. The fish and chips were really good. The batter was more crunchy than flaky but the flavor was great. The chips were really good as well. The food was ready very quickly...but like I said before, there weren't many people there. I would recommend going and trying the fish and chips. I would eat it again.

Boy, have these guys done a great job. They have grown their beer repertoire as they have grown the beer palate in Abilene. This place has had a huge impact on the beer scene in the area by exposing people to styles of beer that they never would have tried otherwise. The food game continues to grow and impress and the coffee is always top notch. The beers, coffee, and great food are a constant and the great people and positive vibes in the business have had a big impact on the downtown community. The block parties and other events are a great way to bring people into the downtown and let them see how Abilene continues to get better. If you only have time to go out to one place while in town, put Grain Theory at the top of your list.
