Been waiting to try Pupatella- Alexandria since they opened. They have been working on it for a few years it seems. Great pizza is all about the dough, a little about the oven, and less about the toppings. I could taste the yeast in my dough - it didn't taste like a 3 day rested sourdough starter dough. It tasted like bread dough yeast. It was also under cooked. I suspect they don't have a 900-1000 degree oven - without it it will never taste right. On a positive note, they have good toppings, The atmosphere was very nice and the service was also very good. they did a good job redoing the building. Wine prices are very reasonable for old town. I think Pupatella has a lot of potential and I’d like to return, just disappointed in the...

But as noted in another review, there isn't a way to notify you when the pizza is ready or how long it will take , so you have to just show back up and it's on a rack. Reheated, still tasted good to me. So I suspect some of this will settle down as it hits more normalcy past the hype spot. Would still go back for the good...
