The reply seems to indicate no one even knew about issues that have a huge impact on your business. Someone should have been observing what was easily observable.
There was no oversight to ensure that you ever had vegan butter or even vegan syrup when you serve vegan pancakes and toast. It was never available with the multiple times I came into the restaurant. The pancakes just come out with nothing to put on them and you get cold dry toast? You weren't aware of that?
It feels like you lack staffing in the kitchen resulting in huge delays for the food coming out, causing it to be cold. No one knew that over long periods of time?
I've provided very specific feedback. The reply seemed to indicate this was a surprise?
I've provided everything I can tell you in this review. I really tried to give this restaurant every chance I could. Hearing that you were unaware of these specific issues, when it would have impacted so many customers, just tells me it was unimportant.
I didn't do the review to get a gift certificate or a discount, so writing to you sharing the same feedback offline isn't going to do anything at all.
I wish you the best of luck, but I won't try the restaurant again. Hopefully someone recognizes there is something wrong when no one was aware of major issues at your restaurant.

I tried this restaurant about 4-5 times. The last two times it took a very, very long time for the food to come out and then it was cold. The staff is very nice, but the service is extremely slow. If you are vegan and order anything that typically comes with butter, they always say they are out of vegan butter. I don't believe they ever have vegan butter, so don't count on pancakes with vegan butter. This last time I was in, the vegan Hippie Hash was really bad. The food, again, was very cold and I would say it took about 30-35 minutes for it to come out. The toast was dry and cold and the food had a funny taste like soap for something that was in the food. It was not busy at all so it shouldn't have taken over a half hour for the cold food to come out. I really wanted to like this place but just cannot try it again. Maybe the food that is not vegan comes out faster and is not cold, but for a vegan, this is not the place. Again, there are some really nice people here but the owners need to fix the food quality and preparation...

I tend to order to go from a combination of wanting to eat at home with less risk of infections spreading to me and my loved ones, and wanting to avoid the crowds and the wait in the restaurant. It is very popular for a reason. The interior aesthetic is set by the cheery, bright colors of the room, and the dining room decor showcases vintage kitchen appliances. It is not pretentious but is polished and upscale which is something I think is hard to nail in a family-oriented breakfast place. You could come here and fit in in a pretty dress/suit or in sweats. You might have to wait 30 minutes+ at popular times. They don't accept weekend reservations. They do, however, continue to let you order ahead online, for pickup, which I really appreciate.
I appreciate them having dairy-free options (I am dairy free but not vegan) in the form of a separate and clearly-labeled vegan menu. Their to go containers are above average and have holes that "breathe," which really helps to protect the condition of the just-cooked food. I also like that you can order vegan and GF pancakes ("GF Anna's cakes") here. They are delicious.
Notes/suggestions to improve: it is difficult for me to order some thing that is dairy-free and gluten-free online. That's part of why I have stuck with the corned beef hash bowl. It would be awesome if on the menu ordering website there could be a comment /instructions section where I could write in to have them please leave off the cheese and sour cream on the hippie hash bowl. Right now, there's nowhere to add even a few words of instructions. I don't eat any dairy but I love eggs. Also, admittedly, this could be solved by calling them over the phone. However, I was there at about 12:30 today (Sunday) and boy was it busy- the phone was ringing off the hook, and the servers could barely get to people waiting at the counter for takeout, much less answer the phone.
