In truth, I think I'd give this a 3.5. According to Google, 3 stars is "it was okay" and a rating of 4 says "I liked it"- I think I'm somewhere in the middle. I want to go back to try nigiri here based on reviews. But my experience hasn't sold me.
We arrived on a Saturday at 4:39 - just after opening for dinner. There was one other person dining when we arrived but it filled up and quickly! The music was playing quite loudly when we arrived, but it toned down some while we were there. It's a fun, funky atmosphere and I enjoyed the general vibe of the place. The service was unobtrusive, but also sort of vacant.
The dumplings were delicious. Quite tasty and the microgreens added a nice twist of flavor. Definitely a good start.
We ordered 4 sushi rolls to share. They had a beautiful presentation! However, it wasn't my favorite sushi by far.
The California roll was unnotable - almost bland. To me, a CR is like a slice of plain cheese pizza. I place a lot of emphasis on how well someone can do the basics... And the CR is a basic roll. And this just fell flat. It truly lacked in flavor.
Three specialty rolls that we ordered were the Eel-Ectric Shock, the Dynamite Salmon, and the Sassy Girl. The Eel-Ectric Shock was delicious and balanced perfectly! The other two were big misses for both of us. The "smoked" or "seared" attempt was not a good flavor combination - my wife felt like all she could taste was the butane of whatever kitchen torch they blackened the food with. I just couldn't get over the very "off" combination of flavors that it had. We didn't finish either of these rolls although we both could have eaten plenty more. It just was not enjoyable in any way. 2 of the 5 things we ordered were great.
One last note is that we were next to the window and there were ants on the window sill and the table where we were seated. The windowsill also had some dirt and dead bugs on it. I'm not bothered by bugs in general, but it was surprising to see.
In general, I know a lot of folks enjoy the nigiri so I'm willing to come back and try it again...I accept my lack of enthusiasm could have been influenced by what we ordered. But for the most part, it was a bit of a...

I took my daughter here tonight (Jan 2023), and the ambiance was very nice. It’s a small restaurant with limited seating, but it’s honestly perfect in comparison to some large restaurants. We sat at the sushi bar and our sushi chefs and server were all very nice and very attentive.
The food came out fast, we ordered miso soup which was very good, and we followed that with the panko soft shell crab and tempura vegetable! Bothe we’re so good, and I loved the fact that they had mushroom, asparagus, and sweet potatoes in the vegetables. They definitely aren’t taking the cheap route in comparison to other places I’ve eaten.
We ordered four sushi rolls of the Specialty Rolls section, and all of them were very good. Again, some of, if not, the best I’ve had since moving here. I’m from Florida and am Japanese so we grew up with sushi, plus I’ve had great sushi from chefs in Vail, Las Vegas, Alaska, Hawaii, Texas and California in places that I’ve lived. We scarfed the sushi down so fast, that we didn’t get any pictures. It was so good, I ended up getting a couple orders of Nigiri, scallops and eel. Those sealed the deal. We each shared this, and my 12-year-old daughter thought they were awesome! She has a slightly advanced palate, but honestly the food is so good that she loved everything we ordered. This is my new favorite spot!
So full, but we had to have dessert because the food was so good. We ordered the K-Pancake and Ice Cream. That lasted about 45-seconds, and I’ll probably order it every time we go.

With that said, Sushi Suyu ranks a 7.5/10 based on my order of the 24 piece sashimi plate (largest offered - $58), the Creamy Yellowtail ($16) and the Hamachi Fever ($16).
Freshness (fish): 9/10 Presentation: 8.5/10 Wasabi: 10/10 (they use the good stuff here) Portion size: 5/10
With a coke, seaweed salad and mochi ice-cream for dessert, my bill was about $120.
This place is tucked at the end of the short main center to the town of Apex and used to be a pizza restaurant.
The presentation was great. The service was very friendly and also great. The food was on par with some of the "higher end" restaurants (again, comparing this place to cities like NY and LA) but is nowhere near the likes of upper echelon places like of Nobu (Malibu) or Sushi Nazawa (NY). I really liked that they chose to mix it up a little by offering a K-pancake with ice-cream for dessert.
The only un-positive observation is that their sashimi and sushi portion sizes, are too small. While the sushi was great, it could have been better if it weren't for the un-generous sliver of fish that sat on top of the otherwise tasty rolls. And while the presentation of the 24 piece sashimi order looks great over a large bowl of ice, I would have STRONTLY prefer larger portions of sashimi on a PLATE (see picture) - the portions here are too small for the $58 price and it looked like the portion sizes were "skimmed" to fit the thin bin for presentation purposes - this skimping is the most likely reason why I would reconsider ordering that particular item...
