I believe the owner of YZ Asian Market (attached to Mizu) and his brother also run this Ramen-ya! I've gone to Japan multiple times just to eat ramen there and I also make many different styles of authentic ramen myself from scratch, including the noodles. Ramen is a personal hobby and passion of mine. So... When I say this place makes good ramen, you can trust my opinion!! Their broth is authentic. They do it properly by boiling the bones for long amounts of time to break down the collagen which gives it that delicious flavor and renders out all that fat that coats your lips. I had the Tonkotsu, which is made from pork bones. I'm not sure which bones specifically they used, but the balance of it felt like a mixture of mostly femur and knuckle bones with some trotters thrown in for that bit of thickening from the collagen maybe? All of the additions to the ramen were well prepared. Even the takoyaki was wonderful! Always get the takoyaki. They make everything from scratch but the noodles. Nobody makes noodles from scratch. It's extremely labor intensive and requires special equipment. Ain't nobody got time for that! Except me of course, but that's only because you can't get fresh ramen noodles unless you're a ramen shop. I'm also just that crazy about making ramen ;) This place gets their noodles delivered fresh by truck from Atlanta. Forgot to ask the brand, but they taste like Sun noodles. It's always Sun noodles usually. They supply the majority of ramen shops and will actually create specific noodles for many of the shops based ingredients and hydration ratios supplied to them by those ramen shops.

This restaurant is connected to the Asian market we love to come to, so we were excited to visit. The menu is quite extensive, which I suppose makes me believe I just ordered the wrong thing, but I was a little disappointed by my meal. I got a kitchen entrée, the chicken broccoli meal, that came with white rice and miso soup or a salad. I got the miso soup. The chicken broccoli was something I got because I typically get that at a Chinese restaurant. The sauce had basil in it, which is something I'm not used to, so the taste felt different to me. I also like a darker and thicker brown sauce, which this did not have. The chicken and broccoli themselves were cooked great. The white rice was great as well, it's hard to mess up white rice. The miso soup was not my favorite, but I made a mistake in ordering that because I do not enjoy seaweed. So... again, I think I got the wrong items. You order at the counter, then they bring the food to you. The menu that shows on the screens does not show prices, which is a little inconvenient, but they have paper menus that you can page through to see prices. I think that the prices are very reasonable for the amount of food that you get. I wanted to get the pork shumai but was informed they no longer carry it. The person who took our order was Mica, and it was a pleasant experience. Overall, I think I would try this again, and get different menu items.

I went here with my son for lunch after the fun of a visit to the DMV. We were both hungry, and ramen is one of his favorite foods. Walked in and ordered at the counter from the menu above. We each ordered a ramen dish, and some steamed dim sum and edamame to start. I didn't notice until we had already sat down that there was another side to the board around the corner with all of the poke bowl options. I wish they had pointed that out at the counter but now I'll just have to come back again to try that! The edamame was steamed perfectly. It still had a little crunch and just the right amount of salt. No second bowl serves to put the shells in so we had to dig around a bit to find the ones we hadn't eaten, but that's not a big deal. Our ramen dishes were both flavorful and the egg was great! I do wish they had some flavor explanations on the menu regarding the difference in a tonkatsu ramen broth and a shoyu ramen broth, but we just went for it and each ordered one. The dumplings were nice. Careful when they come out, they are HOT inside. To be expected, just a warning. We each had leftovers to take with us which were enough for another small lunch. The service was friendly, not anything fancy, but what you would expect for a counter service restaurant. The Asian market next door was great too! I will definitely be back!
