We had an absolutely outstanding experience at Sant Ambroeus in Aspen. From the moment we arrived, the staff were incredibly professional, warm, and welcoming: striking the perfect balance of attentive and genuine without ever feeling overbearing.
They were also wonderfully accommodating. I ordered the Paccheri Rosa but requested it with gnocchi to make it gluten-free. Not only was this no problem at all, but the dish was rich, balanced, and deeply satisfying with some of the best sauce I've ever had. I paired it with the Fiore mocktail which was delightful. My wife had the Tonnarelli Cacio e Pepe, which was beautifully executed with just the right texture and a perfectly creamy, peppery finish.
The portions were exactly right: generous without being overwhelming. Our meals arrived promptly, and every detail from the plating to the pacing reflected a premium dining experience. It’s rare to find a place that delivers on food, service, and atmosphere at this level.

We did family style for the table and had the san daniele prosciutto and mozzarella, vitello tonnato, fritto misto “palm beach style” (obsessed with the lemon aioli), polenta, fegato e funghi (phenomenal), black truffle pizza (also phenomenal), linguine frutti di mare, sant ambroeus ravioli, rigatoni strofinati, fettuccine alla bolognese, branzino all’isolana, brussel sprouts, and mashed potatoes.
As I’m writing this, I’m trying to pick favorites, but keep bopping around because everything we got was so good! I will say (in addition to my comments on the appetizers) that the ravioli was the best I’ve ever had, the strofinati sauce was perfection, and the bolognese! Oh my goodness - incredible.
I don’t live in Aspen unfortunately, but will absolutely return to Sant Ambroeus when I visit again and in the meantime, will dream...
Read moreWe’ve been to the Sant Ambroeus in Manhattan, so of course we had to stop at their new Aspen location while we were driving through. The entire experience was wonderful. The salmon tartare was balanced with fresh herbs, sweet radishes, and creamy avocado. We were so excited to dig in we did not take a photo! I could truly eat it every day. My Paccheri Rosa was perfectly balanced in all ways, as was my partner’s Fettuccine alla Bolonese, which he loaded with extra Parmesan.
The dessert is not to be left out - we wrapped up the meal with the Tiramisu - which was absolutely divine and a must try if you visit.
As always with Sant Ambroeus, the service was impeccable and the entire experience took us straight to Italy. We cannot wait to return the next time we are in Aspen, or...
