I am a pizza fanatic. It is my favorite food, when it's done right. In fact, for much of my life starting when I was 15 years old, I have worked in some of the most popular pizza shops in the area. As the kitchen manager at a local pizza shop I even won a local contest for Best Pizza in Town, which actually covered several surrounding towns. I first learned how to make the perfect pizza when I worked at Yianni's Pub and DaVincis's Restaurant, both in Lewiston, Maine. The thing about DaVincis's pizza is that it's cooked in a wood fired oven. In my opinion, this is perhaps the best way to cook pizza. And the recipe at DaVincis's is pretty good. But a pizza cooked right in a pizza oven can be just as good - if it's done right and if the recipe is good. I have tried the pizza at just about every place in this area, looking for the perfect one. It hasn't been easy. Some places have good sauce, but the dough sucks. Or the dough is great, but the cheese sucks. I purchased a pizza at George's Pizza in Auburn, Maine, for the first time yesterday. It was a pepperoni pizza, and it was perfection. I literally went to pizza heaven. And I'll tell you why it was perfect. First, the sauce. It was obviously a proprietary sauce that they cooked on the premises. Not out of any jar or can. Nothing can compare to fresh sauce, which has been slow cooked on the premises. George's sauce was just the right texture, just the right amount of spiciness, and just the right amount of sauce on the pizza. Next, the pepperoni. I'm not certain, but I'd be willing to bet that they use Hormel pepperoni, which they probably slice straight from sticks of pepperoni on a slicer. I say this because Hormel pepperoni is unique - it has a bacon quality to it, which you dont find in any other brand, and which I love. Also, George's pepperoni is smaller than pepperoni you buy already sliced and thicker. It cups up when it is cooked, and for some reason, this makes a huge difference to the flat pepperoni you normally get at pizza shops. Now, the dough. Obviously, they make their own dough, and they know how to make it perfectly. The most important part of making dough is letting it rise for a couple of days before cooking. It makes the dough light and airy, yet crisp. So many pizza shops do not take this extra step, so their dough is tough and too chewy. George's dough was perfect, and they obviously know the importance of letting dough rise for a couple of days before cooking. Their dough was perfection. Lastly, the method of cooking. The perfect pizza has to be cooked in an actual pizza pan. (unless its wood fired.) That's a round pan with higher edges that has been properly seasoned. This is just how they do it at George's. It makes the rim of the crust perfectly crispy. Lastly, the service. I was a walk-in customer during lunch when they were super busy (they have sit-down tables as well). From the time I placed my order to when it was in my hands took just 15 minutes Folks, if you are in the area and are craving the perfect pizza, you need to go to George's in Auburn, Maine. I live in Dixfield, a 40-minute drive to Auburn, and from now on, I will make the trip to George's for my pizza fix. That's how good it is. Now you can get decent pizza at a lot of local stores in the area. But if you're a pizza fanatic like me, you need to make the trip to Auburn to get George's pizza. I don't care if you have to drive 50 miles - do yourself a culinary favor and make the trip. It just does not get any...

Staff were friendly and helpful when I asked about vegan options. The red sauce has cheese in it, but you can ask for their white base with oil and herbs instead. Last night I ordered my pizza, but I forgot to ask for no cheese. When my pizza arrived and I realized my mistake, my friend was kind enough to go to the counter and reorder for me. (I was so embarrassed.) The person working asked if something was wrong with the first pizza. My friend explained that Iām vegan and I forgot to ask for no cheese. I fully intended to purchase the second pizza because I made the mistake ordering it, but they remade the pizza and didnāt charge me. I really...
Ā Ā Ā Read moreFirst time I've ever been. Never going again. Service was awful. The creepy old man running the front (or from what I can assume was managing) kept staring me down because I caught him looking inappropriately at one of the girls working there. He also kept staring down my sister. She actually left the place because she was uncomfortable. Not only that but our food sat on one of the counters for five minutes before someone realized it was all set. Their food was okay, though I could make a better Italian in a greasy garage. Unless they get better service, then I'd suggest just ordering a pizza or getting an Italian from your nearest convenience store. I don't like paying restaurant quality prices for garbage service and sub...
