I hate carrots. Like absolutely despise them. Why is this important to know? Because I believe that the mark of a good chef is if they can turn something that you absolutely hate into something you absolutely love then their food must be good. And without a doubt David Doughie's is churning out delicious bagels and food. I was craving a bagel but I can be picky about bagels - I find bagels often too dense, or too thin, or too overtoasted that they taste stale. Though these bagels are pretty close to NYC style with crispy shiny crust that you can hear the snap when you bite into it, the interior is not nearly as dense and chewy as NY bagel is but still better than a lot of the NYC style bagels I have had in Austin.

As a vegetarian, I appreciate there are vegetarian bagels sandwiches for us to eat! I got the carrot "smoked salmon" bagel sandwich on an everything bagel and instead of the vegan cashew cream cheese schmear I got the scallion cream cheese schmear. And oh man oh man let me tell you that carrot smoked salmon is absolutely to die for. Remember how I said I HATE carrots? Well this carrot smoked salmon is about the most delicious thing I have tasted - a little salty, a little briny, nice underlying smoked flavor without being overpowering and just the right amount of crunch. I couldn't taste the "carrotness" (I find carrot too bitter I know weird most people find carrots sweet) and I didn't find anything overtly sweet about the smoked salmon. My husband who eats meat even commented that the carrot was one of the best things he has ever tasted. The scallion cream cheese schmear was dressed generously and I appreciated the sandwich was served open face style with thinly sliced red onions and capers on top.

Service was incredibly friendly and I appreciated the guy working the counter who gave us suggestions and allowed me to taste the carrot before buying. Even on a busy Sunday morning, we didn't have to wait long for our sandwiches.

David Doughie’s Bagelry has officially opened its new trailer located at the Lustre Pearl South! Went to try it out during their soft opening and still have my vote for the best bagels in Austin. They have been operating out of the farmers markets stall at Lakeline and Mueller on weekends, and it’s no question they are popular for their New York style bagels, from their constant long lines.

Their bagels are made fresh with a thin crackly crust, lightly chewy interior, and perfect crumb. I like to order mine with their housemade cream cheese (scallion is my preference) and fresh smoked salmon. They also plan to expand their menu now that they have a trailer.

It was also great to be able to order through QR code and not have to wait in the lines you would normally expect from them in their farmers markets stall. The space at Lustre Pearl is also fantastic with plenty of seating. They have a parking lot as well.

This is located at the Lakeline and Mueller Farmer's markets, Saturday and Sunday respectfully. They open up pre-orders every Monday for the weekend ahead. Pre-orders items include bulk bagels (dozen or half dozen), schmears, lox (just the ingredients, no sandwiches).

His bagels are fluffy with the perfect bite. I got to enjoy a variety of his bagels, and particular liked the everything bagel. Not only does he make amazing bagels and schmears, but he is also a kind person who participated in Dine with Maui, a fundraiser to help victims of the Maui wildfires in August 2023. He even went the extra mile to hold a raffle for customers who donated to this charity.

Had heard about this place online yet had found a really long line the last few visits to the Lakeline Farmers Market. Was surprised to find a really short line yesterday at about 11am and ordered my standard bagel order; Smoked Salmon on an Everything bagel with scallion cream cheese and all the fixings. Paid and they took my cell number and got a text a few minutes later that my bagel was ready. Ate it under the popup listening to the musician playing and was really impressed with my bagel. It had that perfect bite; chewy on the outside yet soft and pillowy on the inside. Scallion cream cheese was obviously homemade and fresh, smoked salmon was plentiful and perfectly portioned with the accoutrements so that everything was in balance. Definitely worth the hype and most certainly one of the best bagels in town! I’m a bagel snob and would put this bagel right up at the top along with Nervous Charlie’s, slightly ahead of Big City. Highly recommend!

Very excited about finally trying David Doughies as I have heard great things about these bagels. I got there “before they opened” at 9:25am and there was already a line of about 8 people in front of us. The line went sort of quickly about 15 mins ish. The selection is limited (makes sense as they’re just a pop up stand) but the quality is very high. I had an everything bagel with scallion cream cheese and it was just fantastic. The bagel was actually perfect - slightly fluffy yet dense and the everything seasoning stayed on the bagel?? The cream cheese was very spreadable and super flavorful which is not always the case. Extremely solid bagel shop and I am so excited for when they open up a brick and mortar cause with this popularity it has to be coming soon! The only downside is the bagels are slightly expensive at the moment ($6.50 for a bagel with cream cheese) but they’re a lean operation so I know this is necessary to Lee things afloat. I wouldn’t doubt that prices will go down if they have a brick and mortar. Cheers!
