Food was great in terms of quality and taste - but.....
So we decided to give this place a visit as quite a few friends recommended this place. This is a food truck tucked away (and a little out of sight) at a gas station. They focus on central/north Indian food items and barring a couple of options, practically no curries. From the option of Kulchas (made with Maida/All purpose flour) or Parathas (Whole wheat flour), we opted for parathas. Unfortunately for us, they were out of Aloo Masala as well as Chole. Instead they were serving the parathas with Chana (Black chickpeas). That was a bummer. Since we were already there chose 3 different ones. Wait time mentioned was about 20 mins. It took closer to 40 mins, but the food made up for some part of it. Parathas were big, about the size of a Mod pizza, quite tasty and the accompanying Chana/raita/pickles/onions made it a good taste experience. The Aloo paratha/Chole Bhature is still on the list so another visit is imminent. I will suggest calling ahead and checking on availability of what you want, maybe order over the phone to avoid wait time. If you are famished, I recommend 3 parathas between 2 people. Seating is 6 picnic benches under a canopy which is good considering current Austin weather. Not sure if they sell bottled water - better to carry your own or buy from the adjacent gas station store.
EDIT : Went by earlier this week for the missed chole and Aloo paratha. In fact, called up ahead to check if those were available, placed the order to reduce wait time. Seemed all good, till the time we reached the place, paid and when paged found out they simply did not have chole and were substituting with Chana. Not done, Not done at all. Was disappointed that they would so blatantly hide such things. Strong feedback given. YMMV.

First visit: It was a weekend evening. We ordered pickup via DoorDash. DoorDash showed 15 minutes and we reached in about 20. On reaching we were told it would be a 1 hour wait. There was proper chaos at the food truck. People standing near the window were prioritized. Had to wait for 1 hour and food (parantha and kulcha) wasn’t good and too oily. They were also out of condiments and stuffing was minimal in paranthas. We let it go because they were new and it was peak hour. 2nd visit was on Friday early evening. I ordered via phone and was told to come in 20 minutes. We arrived after 30 minutes and had to wait another 30 minutes to get our order. Food was again very oily and they stuffed Pani Puri filling in Pani Puri in an to go order making it soggy by the time we ate it. Pani Puri water was really good. Third visit: This was lunch hour. I called to order Paneer paranthas and explicitly told to make in very less oil/butter. I reached in about 30 minutes and the food was ready but it seemed like they had almost fried the parantha. I complained and they gladly replaced but I had to wait another 25 minutes. Upon eating it seemed like the dough or paneer had gone bad due to the heat and it was quite sour.
I still may give them another chance due to lack of options but they need to get...

Was promised the order in 20 mins.Reached the place at 12 . Received my order at 12.20 pm. Place another order at 12.25 pm was still promised 20 mins but it took them another 40 mins just to make one paratha and kulcha. Extremely slow service.
Coming to the food. The kulcha had barely any aloo masala , it was all dough only with no aloo filling in between Like i was eating the dryest piece of naan .Same with the paneer paratha. So much dough but literally little flakes of paneer in between. Chat was mismanaged as well.Only irani tea was of my liking.
Service. Is extremely bad and slow. I went to the truck twice to ask and they kept on saying 5mins,7 mins.Expect lots of waiting but not worth it because of the food.
Atmosphere. It is in the valero parking lot off of 183. They are blasting really loud music. Guy rolling the parathas is not wearing any hair cap or beard caps. I could see hair on the bag they used to pack the to go box.
Went with a lot of high hopes but extremely disappointed with the food. All in all spent 1.5 hours at the truck for poor food and even poor service.I think they are new but will go back a month later and update the review incase the...
