Holy cow, I want so desperately to love this place and I think with a few tweaks it could be one of the coolest in town.
First the positive. I love the decor, the staff is amazing, and the music. Location is great.
Ok, soooo they have a gorgeous see through cooler above the bar, and it's full of beer lines and misc bar ingredients and looks a mess. There should be lighting and something that actually draws your eye.
To that point, the decor is gorgeous but interspersed with things like silverware dishwashing rack full of utensils on the divide between the bar and customer seating. Also rags, prepped water pitchers, sauces etc that distract my eye from the cool coyote. Also I don't want to see the tea maker, I want to look at the cool wine and coffee display.
In my opinion, and I've worked at many fine dining institutions in the city, the server area and all these distracting items (utensils for rolling, tea urns, water pitchers, wet rags) and server station should be moved to the curtained area behind the bar that currently has seating in it.
Ok, now the food. I got the crispy breakfast dumplings. I loved their crispy fry and filling was phenomenal. But the spoon drenched the crispy skin, which totally killed the crispy factor and the sauce was just a mix of soy sauce and cheap syrup. There was a well of sauce in bottom of dish so it would be better to preserve the crispy and let me dip as opposed to basting the dumplings. Luke warm.
On to the pork belly. Poorly emulsified cheese grits that lacked the salt and cream to deliver the flavor. Also everything was like warm. Eggs were ok but under seasoned. Pork belly was cooked too hot so although the fat looked crisped, it wasn't cooked slowly enough to render the fat and deliver a non-rubbery final product. Just like duck breast, belly needs to come up slow and low to render that fat. I never throw away food but today I didn't take a to go container.
Here's the thing, this place shows amazing promise. A few minor tweaks and this place could be one of the best restaurants in the city.

The place looked nice on the inside & the young lady who sat us down was really nice! When the waitress came 2 take our drink order, I asked her what type of diet soda they had (which is not specified on the menu). She said, "only canned Diet Coke." I then asked, since its canned, that means we pay for every can, right? Not like fountain drinks?" She said, "No. Every can" Then I asked about the hot teas. "Do we pay for each cup? Like the soda?" She said, "yes, each cup". Then she said, "well, when you figure out what you want, I'll be back!" And walked off with an attitude! So my daughter & hubby said, "well danm, she could have taken our orders 2 give you more time!" I already wasn't happy with the service at all!! So when we got our food, the only thing hot was our eggs & the biscuit! But.. the biscuits weren't done all the way & weren'teven golden brown, but were still white, the bacon was cold, the hashbrowns which were little squares, were cold & old! I had something floating around my water glass!! I was completely done!! All I ate was 1 cold, hard piece of bacon & my eggs!! We looked at the next couple of tables by us & they barely ate their food as well!
Now that it's almost time for the check, waitresses wanna be extra nice, but if I was paying for the meal, I wouldn't have given her a tip AT ALL!! What did she do for us besides take our orders?? U only get 1 round of drinks, so it's not like she's bringing U refills!! From the friendly staff, to the awesome ambience and the great music playing, to a truly exceptional breakfast that was pure sunshine in my belly, what a way to kick off Sunday! I started with the fried green tomatoes and then enjoyed the chicken and waffles, and both were hands down the BEST I have had! There is some sort of special seasoning in the fried chicken that gives it a punch. I can't put my finger on it, but it is definitely unique to any I have had before, and it pairs in the most delicious way with the syrup and waffle! As reviews have mentioned, yes, there is a bit of a wait for your food, but it is so worth it! I would rather wait a few extra minutes for an exceptional meal, than a mediocre rushed out meal.
