This has been one of my (& my family's) favorite sushi places for years (decades for me now). I'd first heard about Ichiban from two friends (in different circles) back in the early 2000s, tried it once, and quickly became hooked. It was (is?) a popular go-to lunch spot for me & my Nike co-workers (back in the day), as well as for others working in the vicinity, not to mention a regular (weekly?) dinner destination for my husband & I early in our marriage.
Ichiban has a wide selection of delicious sushi rolls as well as a number of fully-cooked options for the non-sushi/raw fish lovers in your group. The owners run the place, and treat pretty much every customer (first timers or otherwise) like long-time friends; they've known our son his entire life, and we've heard their family updates over the years as well, and they never hesitate to ask about my family when I'm there without them. You can tell from the number of Christmas photo cards on display (spanning several years) that we're not the only family that's gotten to know them! ;)
Their restaurant business seemed to have stayed strong both through and post-pandemic, and although we have moved closer to the Tigard side of Beaverton, we still make the trip to fill our bellies. (And I may or may be one who buys waaaay more rolls than I can realistically eat in one sitting, just so I have leftovers to eat later.)

Read morereally a uniquely bad experience. the alaska roll was pollock salad and cream cheese -- the standard alaska roll being salmon, avocado and occasionally pollock salad/imitation crab. i can't imagine i am alone in my anathema to cream cheese in sushi under any circumstances. i was able to eat one bite by rearranging the contents of the entire roll, but it frankly just was not worth it.
the food was ineptly assembled, the proportions of rice to pollock (a white fish and lipid salad used as imitation crab, a very gas station cooler-vogue ingredient) sometimes staggeringly heavy, the avocado on the caterpillar roll applied 4 slices thick -- he must have forgot what he cut the avocado for (the alaska roll.) every potential element was completely unseasoned (except by the manufacturer) and present in overwhelming volumes.
in addition, i am not oblivious to the legion of generic white people with names like Tom Waits commenting oblique 5 star reviews on the maps page. i'm suspicious this establishment is employing bots to bump its average rating, which would be completely in keeping with my opinion of their standards. i wish i hadn't...

Maybe its bc i am from a bigger city and tend to travel alot but this is below what I had expected. California roll was also not that great. Reminded me of the rolls I had back in college cafeteria. The don-kat-su was way below from average. I think they buy the don-kat-su from the market and fry it and sell it. I only liked their udon and fried shrimp. Now, with the lady, she seems to be the wife of the owner and her attitude is a bit bitter. Not kind but a bit distant. She wants to clean the tables asap as if she wants us to leave asap. She replies back with a bit of bitterness (not to the level of being rude) whenever we ask for something. Dont really understand why this place has good reviews but guess everyone has different...
