Cajun Craft is plated up fancy and feels more upscale with the price to match, but here all you need is a styrofoam plate. That tells you everything: it is about the food, plain and simple.
I ordered the shrimp plate with twelve jumbo shrimp, and they were fat, juicy, spicy, and cooked perfectly. Easily some of the best shrimp I have had in Waco. The homemade tartar and red sauces for dipping were delicious as well. For sides, I went with the étouffée and the red beans and rice, and both were fantastic: rich, flavorful, and comforting. A few splashes of Louisiana hot sauce over the top sealed the deal.
The service was great. Everyone was super nice, laid back, and welcoming, which made the experience even better.

It was our first time and the nice woman working the front (I believe she was the owner) went over the menu with us and offered samples and made good recommendations for what to eat. Our party of three shared the Cajun platter. It was loaded with a good assortment of Cajun delights: Fried fresh catfish- I'm really picky with catfish and this was good clean tasting fish, not at all muddy tasting, fried oysters, fried alligator tail, 2 kinds of fried shrimp and etouffee. We had to take a to go box home. Most everything was over cooked a little so it was kind of rubbery but the flavors were all nice. We didn't say anything to the staff but I feel that if we had there would have been no issue from them to fix it right.
