I would definitely go back to this place if I find myself in Belton again!
The menu is expansive ... Something for everyone for sure. The portion sizes are actually quite huge...enough of everything for everyone. The wait staff was polite, helpful and patient with our large party. He gave great recommendations and made sure everything was perfect.
I have to stay the $6.99 shrimp torta I ordered was absolutely delicious! The bread was beautifully flattened over a stuffed filling of shrimp and lettuce. A little more avocado would have been nice, but for the price, I was completely impressed.
Kid's menu items were full plates...actually more appropriate sized for adults, but who can complain about too much food for the price?!?!?
Sour cream enchiladas were amazing...and unique...never seen this dish before and it was pretty fantastic especially for a sour cream lover.
The bowl of tortilla soup was huge..and stuffed full of ingredients...not just a bowl of liquid with a few pieces of this or that...it was a full fledged, stuff you to max, complete meal topped with four thick slices of gorgeous, fresh, exactly ripened avocado.
For the downsides....the $1.99 margaritas were very "weak". I suppose you get what you pay for! The Mexican rice was super salty...just a bit too much tomato bouillon perhaps? It was edible if you mixed it with a no salty item like lettuce or sour cream, but as a stand alone item, it was no where near top of the line.
Lastly, the two salsas were both "okay"...one was mild with a very tomato sauce flavor while the other was spicy with lots of cilantro. We found mixing them together made a fairly well balanced salsa. Chips were simple meh.
Overall, for 8 ppl to all be satisfied with no mistakes in the order and some impressive attention to special requests, I have to give them 5 stars!

Read moreI'm a native Texan and grew up loving real Mexican food. I can say, without any hesitation, that this is the best Mexican restaurant I've ever been to. We were regulars here when we lived in Belton and still came by often when we moved to Temple. We now live in Georgetown and we STILL choose to drive 30 minutes to come see these guys. I genuinely love the staff, as well as the amazing food; which tastes like a little abuela is in the kitchen whipping out old family recipes.
I don't tend to order Tex-Mex stuff, as I opt for more traditional Mexican fare. My boyfriend, however, typically prefers Tex-Mex items. This place does not disappoint on EITHER. The breakfast burrito is insanely delicious. It's hard to pass up their tacos: tripas, chicharrones, nopales, pastor, barbacoa....it's all on point. The salsa is flavorful and adequately seasoned (FINALLY a place that does salsa right!). I was genuinely surprised and excited the first time I had the charro beans because they have FLAVOR and are made perfectly, with little pieces of chicharrones! The menudo is fantastic. You've got to try the Super Molcajete. I believe it's on special on Thursdays? Oh! And the lemonade is to die for. So perfect. Horchata is well done, too. Honestly, I could go on and on. I highly doubt you could go wrong ordering almost anything.
They get busy pretty much every day of the week around peak times (duh, because they're delicious and people know it) and the parking lot is small. Keep that in mind and carpool, come a little earlier/later than prime times, or do what we do if the lot is full and park on a side street.

Read moreFor lunch on Friday, we stopped by Mi Pueblo in Belton. There are always a lot of cars here when we drive by, so we wanted to give them a try. The parking lot was packed, and parking is a challenge. The restaurant was very busy, but we were seated right away. Like the parking lot, this is not a very big restaurant inside. They really pack the tables in to maximize the use of a small space, but the vibe was good. We were given chips and salsa as soon as we were seated, and the server was friendly and helpful with the menu.
The chips and salsa were very good. The chips are crisp and sturdy enough to hold up a scoop of salsa. We were given two different salsas, a blended salsa and a chunky salsa. We liked them both, but the blended has a slight tomato sauce type of taste, so I preferred the chunky. I got the Texas Burrito Lunch Plate and my wife got the Chimichanga Plate, off the regular menu. The burrito was large and stuffed full of steak. I added some chucky salsa to give it a little more flavor, but it was very good. Like the burrito, the chimichanga was large and stuffed full of steak. The chimichanga came with a large dollop of sour cream and guacamole. Both plates came with refried beans and Mexican rice, which we also really liked. It was a very positive dining experience and both meals were reasonably priced, especially considering the amount of food that you got.
Overall, Mi Pueblo is a great place to get Mexican food in the Belton area. Based on our experience, I highly recommend that you fight the parking lot and give them a try. I hope that Mi Pueblo can eventually expand to a larger building with a better parking lot. Regardless, we...
