Food is subjective. People's palates differ. However, my husband and I have dined at Vedge several times, and we have always been pleased (and sometimes blown-away) by the creativity and crafting of the dishes. So it was with high expectations that we headed to Ground Provisions.
5 course tasting menu:
#1 Polenta Cornbread - Smoky gazpacho was as promised - smoky, yet refreshing. The cornbread was saturated in basil butter, so much so, that it was unpalatable. Also there must have been a significant amount of finishing salt on top of the tomato because that's all I tasted in my first bite. The ratio of freshly sliced tomato to cornbread was off in my opinion - doubling the fresh tomato and halving the cornbread would make this dish better. 3/5
#2 The "Dirt" List - The beets were surprising in texture and the various toppings made every bite a surprise. Definitely enjoyed it, but the dish was slathered in too much oil. The greens would have been scrumptious if they were not so salty and oily. The smoky eggplant under the greens was delightful. "Fritto misto" of mushrooms was a huge disappointment. I love mushrooms - their earthy flavor, in all its various forms, are always delicious. I got no mushroom flavor, but rather fryer oil/salt. 2/5
#3 Stuffed Pappardelle - This dish sang. It was by far my favorite. The technical difficulty of the dish was on par with the outstanding flavor profile. The peas that popped, the scallions that added a sharp bite, every detail about this course was sublime. 5/5
#4 Charcoal Grilled Zucchini - The zucchini was cooked beautifully and the sauce was complex. Not staggering in its creativity, but solid. 4/5
#5 Peach Pandowdy - The dish was served piping hot (nice job waitstaff), but this meant that the ice cream (served on top) was significantly melted when I received it. In the center of the dish was what looked like raw pastry dough. I took 3 bites - all of which read to my mouth - SUGAR. The peaches, and even the sage, were lost to the mactruck of sweetness that barrelled through the dish. 1/5
We also did the wine pairing; each pairing was both playful and unexpectedly delicious. The wines complemented the dishes.

The restaurant was at capacity, but the food and drinks arrived in a timely manner. As always, we left full but not overstuffed. Still our favorite fine dining experience in the West Chester area. Ground Provisions brings their A game to every meal and every beverage.
We love vedge. So when ground provisions opened, we were thrilled to have this option closer to our house. This was our 4th time at ground provisions, having dined there for the fixed menu and wine pairing during our other visits. We were celebrating our wedding anniversary. We saw that the bar menu was different, therefore booked a bar seat assuming we'd have the option of both bar and fixed menus and not seeing any menu restrictions on the website about bar seat reservations. Upon arrival, we were told that since we made a reservation, we were restricted to the fixed menu. When we expressed our confusion and disappointment, the manager came over, noting that he'd seen on our account that we'd visited 3x and telling us that he'd put a note on our account so this wouldn't happen again. He also commented about needing to justify the space, so although he brought the bar menu over to us, we felt pressured and ultimately ordered the fixed menu again. Upon closing our meal from the bar, he was behind the bar but said nothing to us. We have been thanked for dining with ground provisions each time we exited the restaurant, but this time no one said anything as we exited. Read moreHands down, this was the best meal I have had in five years. I also have a 4 year and a 7 year old, so getting out to eat is no easy task. Both kids were away this weekend. This meal was the real treat.
It was a well planned and excited menu. The dishes w were delicious and thought-provoking. My wife and I had the opportunity to discuss each course and its complexity on the ride home.
The staff was amazing and accommodating. The icing on the pervebial cake was the small shopping experience at the end of the meal in the provision shop.

We have been back to GP for dinner once more and the food did not disappoint yet again.
Today I stopped in to pre-pay for a dinner for my parents anniversary. I stopped an took the opportunity to get a few sandwiches and a side salad. Best hogie I have had in such a long time. Decided on the smoked tofu and a mushroom medley. I almost don't know how to explain how good it was.
I can not say enough good things about the team at Ground Provisions.

Back again. Summer makes this place even better. The use of the local produce is why the came. The menu did not disappoint. Fresher than ever. Hard to say best meal yet as nothing here has ever let us down.
