Love the atmosphere of this place! It has a modern, urban feel with bright, stylish lights, not your strip mall vibe pho place. Love the open kitchen concept so you can watch the cooks prepare your meal. The giant pots for broth were impressive. The pho broth was spot on, deep flavorful with a nice balance of clove and anise. I got the vegetable pho with beef broth and was impressed by the star cuts of the carrots and turnips! I’ve never had turnips in pho before, nice surprise. Also came with Tofu. The rice noodles are of the wider variety which I liked but felt my bowl was a bit lite on noodles. I’d suggest increasing the noodle portion a bit, like 20% more noodles! The chili provided on table was awesome. Herb plate was sufficient but not impressive. I would’ve enjoyed some fresh jalapeños with my herb plate and a more robust amount of lime, bean sprouts, and Thai basil. We’ll be back!

Their drink menu is great too—lots of boba and tea options. Casual, clean, and quick service—definitely a solid spot for authentic Vietnamese comfort food in Boulder.

Stopped in at Pho 559 on Baseline and really enjoyed it. The vermicelli bowl with grilled meat was fresh and flavorful, plenty of noodles, crisp veggies! The rice plate was solid too. Portions are generous, prices are fair, and service was quick and friendly. I’ll definitely be back when I’m craving Vietnamese in Boulder.

In 15 years of enjoying pho I have not had my mind blown EVER in such a way as it was today. This place is the best I've ever had.

3:27 PM I haven't even received my food yet and I am fully impressed. Clean, beautiful interior, comfortable seating, nice staff and great menu options really have me excited. They seem to have thought of everything here including easily accessible power outlets making it easy to charge my phone while I wait for my food. They also use FILTERED WATER for their drinking water which, as any water snob knows, is not the standard in even some of the best restaurants. I tasted it, was immediately impressed, and confirmed later when I was paying.

I ordered the hot stone bowl, taking advantage of the 20% off deal they are offering for grand opening. I love that I can see their kitchen area behind a glass wall. Will update when my food arrives.

3:37: I thought that 10 minutes was a little bit of a long wait for pho, and my belief that it was due to ordering the most elaborate menu item turned out to be correct. First I was delivered a huge plate of cold pho meats and noodles with another plate of fresh herbs, sprouts, limes, and jalapenos, followed by a piping hot stone bowl of broth with a huge beef rib and an oxtail vertebra. The things stayed boiling for several minutes. The next part is a blur because I went into a feeding frenzy. The broth was amazing. The meat quality was significantly above par for a pho restaurant and tasted like real meat. The presentation was stellar. I was hungry and I ATE.

I ordered the Vietnamese iced coffee for dessert and while I am waiting, I see that they are making it fresh. Bravo. This place...

Two stars because the people are kind, the portions are generous, and the pho was good. We also enjoyed the egg rolls. Unfortunately, my husband got the lemongrass chicken and it was served completely raw. I’m talking pink all the way through but seared like a steak. The dish was comp’d and we were offered spring rolls but we likely won’t return. Big bummer, we were excited about this place but are now weary of...
