Atmosphere was very nice. Went during lunch, was quiet and clean, definitely has a small modern bistro feel.
Service was good, attentive. Took our orders quickly after giving us a good amount of time to browse the menu. Never had to call them over to refill our drinks (I really appreciated this due to the spicy food).
Food: REALLY GOOD! Our server gave us an option to choose the spicy/heat level of our food (1-5) and we went with 2. Heat 2 was good, bordered on almost too spicy for us so we took breaks when eating to drink and recover but that felt like part of the fun of trying something new! Will probably sticking with level 1 though š (my perception of spicy must be much more tame than theirs š). Food rating (1-10): -Shrimp Summer Roll: 6 Was good but Iād like another option for dipping other than the peanut one. Tried dipping it in the broths of the other things at our table but none was quite right to pair. Maybe if there were some more noodles in the roll it would hold the flavor of another dip better? -Pork Egg Roll: 7 I would rank it higher but (and this isnāt a comment against how it was served) we only got one per lunch special and ended up splitting it since only one of us had the lunch special. Iād rank it higher if I had the chance to experience more than half of one. Otherwise Iād say theyāre pretty good, really liked the dip it was served with, tasted like sweet chili sauce. Yum. -Thai Bistro Soup: 10 This was really really nice. It was a little spicy but I believe that the coconut milk it was made with handled the spice really well. Instead of lingering spice the soup had a really dynamic flavor that was really refreshing. It was fruity, then spicy, before finishing with a smooth almost creamy coconut flavor. It truly stood out, and it came with the lunch special! -Chicken Pineapple Curry: 9 Sweet and spicy! Which is one of my favorite flavor dynamics! Definitely want to try this again at spice level 1 but I wouldnāt be against having it at level 2 again! Iām amazed at how well the broth went with the veggies and chicken while holding onto an almost fruity sweetness that contrasted nicely with the spice. -Chicken Pho: 10 Weāve been looking for a good Pho place after Little Saigon by Shaggyās on the Rez closed down and I think weāve found it! Outstanding flavor! You could really taste the chicken broth, they give you plenty of chicken which makes the price super fair! I also believe they buy a whole chicken and cut it themselves, you could really taste and see the effort that went into the dish! Iām extremely happy to have found such a great place for Pho! There wasnāt a vegetable option on the menu but I wonder if we could convince them to serve us one? I know Retro Vietnam has a veggie Pho, I wonder if Thai Bistro could do something like it?

I went to the restroom and came out and the check was on the table. Wow, I had to flag the waiter down to get a refill. He went to every table and asked if they were ok, but for meā¦.. nothing. In this day of social media and what it can do to a business should be a reason to treat customers like you want them to return. I will not spend money here again.
