I have worked in a proper, from-scratch artisan chocolate shop before and I wasn't impressed with this place or its chocolates, especially given how the chocolates were described and played up by the guy working there. My husband and I were visiting the area earlier this week and stopped in while waiting for a table at The Square Root right across the alley.
We were told that the liqueur chocolates were like "little shots", that they were very strong, that the woman who makes them doesn't cook out the alcohol and has a heavy pour. I've had chocolates like that before and these were not like that.
We got a $12 box of I think six or eight chocolates, most of them the alleged liqueur-filled chocolates and not a single one of them had a remotely distinct liqueur flavor. The filling for each one just tasted like a basic ganache. The Black Russian did not taste at all like Kahlua, the Irish Cream did not taste at all like Irish cream. In fact they were all very similar. The Apple Caramel or Apple Pie or whatever it was supposed to be just tasted, faintly, like a caramel filling, no apple flavor to be detected.
And most off-putting of all, the Chocolate Velvet (I think it was called) which just had a basic ganache filling, had a whole hair sticking out of two different parts of it. I understand that hair exists and it gets around, but I still see no reason for a hair, especially one that big, to end up in a tiny chocolate truffle. This is what hair nets and simple awareness and quality control are for. I noticed it as soon as I picked it up to take a bite, it was very obvious.
I wasn't impressed with the shop's "variety" nor with most of the execution. If you're ever in Raleigh, NC, go to Escazu Artisan Chocolates, which is run by a very talented professional pastry chef and chocolatier, where they husk, winnow, roast and grind their own fresh cacao beans to make the best from-scratch chocolate I have ever had in my life, and where the liqueur chocolates leave absolutely no doubt in your mind whatsoever that they do indeed contain nice, strong, distinct portions of very good liquor and liqueur.
