
I brought a fairly large group to celebrate a milestone birthday. Service is excellent! Food is quite good, but it is a typical steak and seafood focus on excellently prepared mains, with similarly well-executed, yet limited, mostly pedestrian sides, salads, and desserts. The atmosphere is fine; the decor is solely focused on "inoffensive," and it can be noisy. Staff are very well trained and execute to perfection when delivering Eddie V's curated high-end experience, but this only appears to be an artisanal chef-driven kitchen. So the caveat is this is a chain; if you wander out of the lane, that part could seem Potemkinesque. They have a good menu of their cocktails, but a seemingly standard craft revival cocktail may need direct instruction or modification. Limited beer information. There are better places to experiment or explore, as the culinary knowledge here is tightly scoped and falls down on exploration. For example, knowledge of listed cheeses lacking: "blue," but nobody could provide stilton, gorgonzola, Roquefort, cabrales, or d'ambert, similarly for "goat" and "feta," so 0 for 3 on cheese. My bias: Whole Foods staffers could talk about these things for hours, so lacking even the specific types seem like trivial oversight. Similarly: Tea/Coffee options/knowledge are also lacking, something most craft baristas could do 20+ minutes on roasts and tea blends off the cuff. They didn't seem to have a sommelier available, or at least not suggested to me, which may be a sign of respectful politeness in that the waiter was reacting to my confidence in the dining room so as not to offend. That's my fault for expressing such. Large wine list with many intriguing but info-lacking for having a bunch over 300/bottle; as a result, I stayed with lesser priced options to minimize any disappointment of mispairing what would be a superb wine. This review seems harsh, but do not make that your takeaway; I want to point out what Eddie V's is not. It was a super time. The family loved it. I was very pleased. Everyone was treated very well. Staff handled it all charmingly, even when our culinary scratching beyond the surface revealed the assumed but missing depth behind the intricate menu. Ultimately, the experience is why you go, and the waiter and attendants made it special. They do accommodate/are aware of allergies/dietary (more steering away or direct deletes without factoring the impact over a bespoke rethink of the creations); when you desire deeper dives into the foodie experience, that there is a fault. From the moment we walked in, we were greeted with a warm welcome and an ambiance that exudes elegance and sophistication. The service at Eddie V's is truly exceptional. Every staff member we encountered was courteous, attentive, and incredibly knowledgeable about the menu. The food was the highlight of the evening. Each dish was prepared to perfection, showcasing the culinary expertise that Eddie V's is known for. We started with the lobster bisque, which was rich and creamy, followed by the exquisitely fresh steak tartare and tuna tartare, both bursting with flavor and impeccably presented.
For the main course, the bone-in ribeye with crusted parmesan and horseradish was a standout—cooked to absolute perfection, it melted in my mouth and was paired beautifully with the rich, tangy flavors of the horseradish and parmesan crust.
The attention to detail in both the presentation and flavor profiles of each dish was remarkable. Even the sides, like the truffle macaroni and cheese, were executed with precision and flair. Additionally, the smoked Old Fashioned cocktail was an absolute delight, perfectly balanced and adding a sophisticated touch to our dining experience. We concluded our meal with a decadent dessert of bananas foster and Belgian chocolate cake that was the perfect ending to an unforgettable evening.

Gets pretty full and busy on a weekend, even in Burlington. Definitely come with a reservation. Nice decor and accommodating waiters. Took a long time to get our food into the system since our waiter didn't come by often - no worries though since it's known that there is a staff-shortage in the restaurant industry. Just be patient and try to flag him/her whenever you can. Food was excellent. They're more well known for their seafood dishes but their steaks were also very good.
