Many, many thanks to the Los Colobos CHILI'S GRILL & BAR for exceptional service and delicious food. Most importantly, Carolina's Los Colobos CHILI'S restored my faith in a foodchain that was once the gold standard, IMO, for the most flavorful fajitas, mojitos, and chips with queso.
I can't accurately confirm when Chili's decided to revamp an already perfecto menu. Like many foodchains, the mid-2000's guilted all of us to choose healthier options—low sodium, less sugar, and the guilt-inducing 'On the Lighter Side' selection. I love healthy eats. I often choose from the lighter side. Somewhere in the corporate world of Chili's, a well-meaning executive, or as I prefer to call it, DESTROYER OF FOOD, caved to the health craze and revised a perfect menu. If it ain't broke, don't fix! exasperated sigh A Suddenly, the Cadillac of fajitas has an un-Chili's flavor. I assumed it was an isolated event; a random Chili's having an off day. Nope. From Louisiana, Texas, Mississippi, Alabama, Florida, Georgia, South Carolina, to Puerto Rico ... EVERY Chili's ruined the unique taste of the beloved fajitas. The bottomless chips and salsa? Not as bottomless as they once were. In fact, a South Carolinian Chili's was appalled when our table of four requested more chips – four people, one weak basket of chips. I thought the waitress would publicly announce our group as greedy gluttons. We were rewarded with stale, broken chips. Fast forward to 2018. We relocated to Puerto Rico. Here, we tried four locations, dining in, and orders to go. The worst of the bunch has to be the Isla Verde Chili's. *See that review. We lived on Isla Verde Avenue and could easily walk to this location. I gave this Chili's three chances to get things right. I AM fair, but there's only so much I'm willing to put up with. Terrible service and bland food. Sadly, 2019 was the year Chili's and I broke up.💔
Fast forward to 2021. We decided to give CHILI'S BAR & GRILL a second chance. A friend recommended the Chili's @ Los Colobos Shopping Center in Carolina. FINALLY!!! Let's begin with the host. We were seated immediately. Our server was top-notch and easy on the eyes. (Had to mention it) He was attentive and quick to suggest recommendations. We began with chips, salsa, and chili queso. And...they were bottomless! Who knew?! The hubster had a Pick Three that included the Southwestern eggrolls, boneless wings, and burger sliders. All delish. We'd been at the beach all day, and you know that drives an appetite way up. I needed protein. My choice? A 6oz (10oz available) Parmessan crusted sirloin, accompanied with steamed broccoli, and perfectly crisp (not soggy) fries. The sirloin was mouth-watering. EVERY. SINGLE. THING. WAS. PERFECTO!!
Los Colobos Chili's is the best of the bunch. That handsome server? He sent us home with BOTTOMLESS CHIPS. Welcome back to my life, Chili's.

Read moreI’m only giving it one star because I can’t give none. This was by far the worst Chili’s experience. Got sat down next to a few waiters just chilling and eating. Then after what felt like too long, one gets up and comes to take our order. Doesn’t wash her hands or anything. Just gets up and comes over with a nasty attitude. She puts in our order and sits right back down at her table, gets on FaceTime with someone and just proceeds to chit chat and chill while rolling silverware. She had an attitude every time she came to deal with us, almost spilled my soup when she practically just threw it on the table, gave me a tea spoon to eat it with, had an attitude when I asked for a soup spoon, the ribs came cut in half like someone ate one or something and in the end, when we paid, she threw trash in my water and snatched the drinks off the table. Maybe it’s a little much but I like to drink my water before I get up from the table. Definitely will make the extra drive to San Patricio or any other Chilis. Read moreFirst, the menus were dirty; sticky and pieces of food were stuck on them. Then the servers started cleaning the other tables around us, sweeping so hard, causing dust to come up in the air. These tables were full of particles as one male server wiped them, particles were flying pretty close to where my boyfriend and I were seated. I found this to be rude and inconsiderate. I was not impressed by the food. It was so-so. Fully cooked but not tasty. My boyfriend ordered the Fajita Mix dish. They provided just 3 fajita wraps instead of the usual 5. The cuts of the vegetables like peppers were too big. Not enough sour cream or guacamole for the price. Come on guys. The music: good choice of songs but they were in a mix and cut way too short. I didn't get to enjoy the reminisce of the songs. It actually made me feel like I had to rush. The bathrooms were not too bad but could be better. The server was polite and provided good service and a proper amount of napkins. She was quick and got the order exact with no errors. Good job on that. I think management needs to review these...
