Open Sunday, number one. And they have yellowtail collar, my favorite! And the Nigiri Saba (Makerel) was perfect, with a hair-thin small slice of lemon on top. My spouse thought the "mild" spice in the Ramen was more "medium," but they have a "no spice" original that we'll try next time. Two Sundays later, we came back to try some non-ramen food. I got adventurous and ordered the Rolley Rice Bowl, an intriguing mix of surimi, furikake, sushi rice and sesame seeds, with a dash of chili oil, topped with avocado and an Ebi heart. It was delicious! I also tried sushi-chef TJ's special nigiri, pan-seared salmon belly. My spouse commenced a walk-through of a new menu "to try everything," and devoured the three-meat fried rice before I was half finished with my rice bowl. Once again, a great meal!

Kabuto Sushi and Ramen in Cedar City is an absolute gem! We had the ramen, and it was bursting with flavor and perfectly prepared. The broth was rich and comforting, the noodles had the right texture, and every bite felt thoughtfully crafted. Honestly, it was better than most of the ramen houses we’ve been to in Las Vegas, which says a lot. If you’re craving authentic, delicious ramen without the big city drive, Kabuto is the place to go. Highly recommend! Even with one waitress working today she made sure all the tables were quickly taken care of and did so with a smile on her face. The serving sizes are almost as impressive as the quality of the meal itself.

Kabuto’s new location in Cedar City is incredible! The energy was vibrant, the staff was friendly, and even though they were busy, everything came out quickly and tasted amazing. We tried the Tropical Delight and Mango Tango rolls, potstickers, Kake Udon Noodles with chicken, and the short ribs with soup and salad (I’d drink that salad dressing!). The mussels with quail eggs even got a thumbs-up from the adventurous diner next to us. Watching the sushi chefs work was a show in itself! The atmosphere is fun and lively—this spot is a must-try.

Had to try the new place in town. Honestly can't understand all the 5 star reviews. Service was good and nice atmosphere but the food was not 5 star. But I guess that is subjective. My daughter accuses me of not liking any Japanese places, so maybe I'm a tough critic. Having lived in Japan and with more than 30 trips to the land of the rising sun, I feel I can judge. Ramen was small. Instead of soft, melt in your mouth, flavorful chashu(pork) it was chewy and hard. At first I thought it was a bone, it clinked on my chopstick, and not a piece of meat. The ramen egg was not flavored, just a plain hard boiled egg, that was over cooked. Green sulphur ring around the yolk. Not a nice flavored, semi soft yolk ramen egg. (Nitamago. Look it up. While your googling check out chashu too) Sushi rice was over cooked and chewy gooey with the nigiri. Did have nice sized portion of fish though. I'll go back and see if it improves after they've been up and running a bit. I'm always for second chances. If you don't know "good" Japanese food then it is a nice option and I can recommend for something besides Mexican, hamburgers, or...

Fairly new place in cedar. Went because of the great reviews, and the restaurant backed them up!! Absolutely fantastic place.

A large menu of ramen and sushi rolls made it hard to choose, but decided to go with the blue fin tuna sashimi, jackpot roll, and seaweed salad.

The blue fin melted in my mouth. Talked to the head chef who was so nice and friendly... He said he's really focused on bringing in a variety of extremely high quantity fish. The blue fin is an example.... Absolutely delicious!!

The jackpot roll was huge! And so fresh and flavorful. It was a great choice.

All of the staff were really friendly, and it was great talking to the head chef, and seeing how commited he is to a great dining experience.

This is a fantastic place that I highly recommend. Some of the best sushi I've had, and I live in Vegas, and we have some pretty upscale sushi places.

I'll definitely be stopping here again when I pass through!

One note.. Got there about 7:30 on a Friday and there was a small wait, but it was only me and my friend, so we had a seat immediately at the sushi bar. However, it's absolutely...

Tucked away in a cozy corner of the city, this sushi restaurant is a hidden gem for anyone who appreciates fresh, high-quality Japanese cuisine. From the moment you walk in, the ambiance is warm and inviting, with a clean, modern aesthetic that sets the perfect tone for an intimate dining experience. The menu offers a balanced mix of traditional favorites and creative house specials, with each dish beautifully presented and thoughtfully crafted. The fish is incredibly fresh, with melt-in-your-mouth textures that speak to the skill and care of the chefs behind the counter.

Service is another standout here — attentive without being intrusive, with staff who are genuinely passionate about the food they serve. Whether you’re a sushi connoisseur or new to the scene, they’re more than happy to recommend rolls or sake pairings based on your tastes. Highlights include the signature toro tartare, the seared scallop nigiri, and the chef’s omakase, which is well worth the splurge. Overall, this spot delivers not only exceptional sushi, but a full dining experience that keeps you...
