Let me start off by saying their ramen is delicious. But the service is questionable. My mother ordered ramen after waiting about 20 minutes in line. We paid (cashier was friendly) and went to wait on the buzzer to go off. After 30 minutes we went back to the front to make sure we didn’t miss our food somehow. As we waited a lady behind us wanted a refund because she had been waiting about the same amount of time as us. They said it was going to take possibly another hour for food. Then the chef comes up to us. With an attitude told us off about how if he gave us a refund he’d have to refund everyone else in front of us. Also that we weren’t the only ones waiting. He then asked for the receipt. He asked us how long we had waited in line and that it takes time to make the food. I went to grab the receipt and when i came back he threw the card at the cashier for a refund all while looking like we were in the wrong. Let me reiterate. WE NEVER ASKED FOR A REFUND. We had asked how much longer for food. He never seemed to care that we just wanted food and not to cause a fuss. We didn’t get a refund because we politely told the cashier we would take the ramen that was now ready. Once again food was amazing. Cashier did an amazing job but the chef/manager could learn to cool it and maybe not act like we were a burden. Also just to put it in perspective Papi Queso had about three times the line and was respectfully thanking people for their patience and told them approximate wait times when ordering. i have had the buns before and they are great! love the belly bun and the Thai tofu bun and they're both so good! 5/5 on them! I had the ramen for the first time tonight and it was good, not perfect though. I had the miso ramen, the toppings and noodles were great! I wish the noodles themselves were seasoned when they were made/cooked, but they had a great texture! the broth was creamy and seasoned pretty well, there was just a slight hint of something burnt in the broth that was a little off-putting, I tried the broth before I added it to the toppings, it was definitely in the broth. It wasn't bad enough that I couldn't eat it though, just a burnt flavor that stuck on the palate. this + the unseasoned noodles are the reasons I deducted a star! don't let this deter you, it is great otherwise! I will try the spicy chicken or pork next time, highly recommend the buns of course!

also I see a lot of people complaining about the price, in my experience this is very standard ramen pricing. considering the location and how much work goes into making ramen soup broth it is definitely worth being in the $13-20 range. I've had better ramen for $14, and I've...

I got the bulgogi and schnitzel buns, and the house rice cakes with pork belly kimchi. It was opening day so the line was long and service wasn’t the fastest. So that’s ok, I’ll survive. They were also running out of menu items as my time in line progressed. The buns were DELICIOUS. Very very tasty and unique. The schnitzel bun was a huge surprise in uniqueness and flavor. Bulgogi bun was good but without as many complex flavors. Both buns were cold, which was a disappointment. But again, it was opening day and the place was a mad house. The house rice cakes with pork belly kimchi was by far the best Kimchi entree I have ever had. Flavors and textures were literally perfect. I could not have been more pleased with that. All in all, looking forward to visiting again when the newness dies down some to try the pork belly buns and ramen. Give this a go if you’re in Optimist Hall 👌🏾

The bao were OK, but the show stopper HAS to be the ramen! Now, I get what other people are saying, it's quite a small portion for how much you pay....however, I could taste the quality! I have lived in Japan for a number of years, so I have had many types and qualities of Ramen. So I believe I have some credibility in saying that this was the best Ramen I have had since coming back to the US! The Broth was absolute perfection, the chashu was soooo delicious, and the noodles the perfect texture. Oh! And the egg! Marinated on the outside, slightly gooey on the inside! Perfect Ajitsuke Tamago! I believe the bowl is well worth what they charge...its no instant ramen, it is artistry.

Bao & Broth is one of the original kiosks in Optimist Hall and has a solid following. The menu is essentially divided up into noodles and baos. Food comes out relatively quick even when OH is jammed with people and customer service is very good. We’ve tried most of the menu over many visits. The Spicy Miso and Tonkotsu options are good - portions are on the smaller side which is good for someone on the go. They also have a kids option which is popular in this house. The baos, to me, are better than the noodles. The OG and KFC fried are must orders. They also have specials so check the board. The Spam Musubi Bao recently was good with a fried egg square to match the spam. Given the influx of new ramen joints in CLT since the pandemic, the competition is ramped up. If you’re hankering for ramen in OH, grab it.
