Have you ever been to a BBQ in the southwest completely catered by a 70 year old authentic old school pit king with sweat on his brow, an apron stained with blood, and absolutely no plastic cafeteria lunch gloves in sight? No? Then you probably wouldn't appreciate the simple pure flavor and HEAT🔥 at Signal 30 in Cohoes. My husband had to do that thing where you suck air in to blow on your food because it's too spicy. I had the pulled chicken, which I can only compare to one of those cakes that looks like an actual object but then you realize you've under estimated it because really it's a cake! #flavorbomb And I now have to apologize to my Great Grandma Teen, as she rolls over in her grave, because the baked beans were perfectly Al dente (can beans be that or is it reserved for pasta?), Not too Sweet, and the level of smoke and meat was on point. Also, if I played a drinking game where I took a drink every time our server checked in us, I'd be HAMMERED right now writing this. Positively Hammered. I have failed to mention how often my family goes out for ice cream instead of eating dinner during the summer.... I scored extra "Mom Points" for actually feeding them real food before ice cream tonight. The desert dishes are all named after nostalgic WWF stars (be still, my fan girl heart) and Six Year Old approved 💕

Was a meh experience, but there were a few good things, too. The ribs had zero smoke flavor. They were flavorless, no smoke ring, and were wet and gray, as if they had been boiled. Not saying they were, but that's how they seemed. The sauces weren't able to make them good. The sausage was really an Italian sausage, with fennel, which isn't what one expects when getting sausage at a bbq place. Not smokey, either. The baked beans were so sweet, they were more like a dessert. The molasses flavor was so strong, that's all you could taste. The chili tasted like plain ground beef. The corn bread was good, however. The mac and cheese is tasty, despite it's pasty texture. Their potato salad is absolutely delicious and I would go there just to get that. The staff was super friendly.

I deliver for Mealeo and every time I pick up a meal from Signal 30 to deliver it, the barbecue smell in my car makes my mouth water. Finally tried it for myself tonight. I ordered the brisket plate with Signal 30 sauce and Carolina Gold. For starters, the portion size is huge! I ate maybe a third of it so I have dinner for two more nights. My sides were potato salad and coleslaw both of which had a nice flavor. Coleslaw was nice and crunchy and the potato salad was not mushy…yay! I’m used to my brisket a bit pinker so I feared it was overdone but it wasn’t. The flavor was amazing and the brisket fell apart with a fork, just like it should. The sauces were unbelievable. So good! The Carolina Gold had a tiny bit of kick, and the Signal 30 was the perfect blend of smoky and sweet. My only complaint was that the corn bread was soggy from being in the container with the meats, but the part that wasn’t soggy had great flavor. I will definitely order from here again and will recommend it to anyone who is looking for great barbecue...

We like most of the food options here, especially the wings, so we will still be ordering take out. The service has gone downhill in the past few times we have come in, from waiting for sides until we were about to leave... to not getting a refill after asking 4 times. Food sometimes takes a very long time, we have previously waited half an hour for our appetizers.

The outdoor seating is nice and they have some good music and a fire outside sometimes. The inside has bright white lighting and the dining room is pretty small.

This most recent time we came in while there were multiple football games playing. Big mistake if you want a peaceful meal. There were even a couple guys playing with a tazer and zapping each other where the sun doesn't shine. Sometimes the regular bar go-ers are pretty nice and friendly but they seem to get a little belligerent.
