My wife went here last night (1/30/25) and got horrible food poisoning. She called to speak with a manager and report the incident. He was horribly rude, laughed at her, said to āproveā it was the food from the restaurant that made her sick. We have eaten the same exact things for at least a week prior to her going out with a friend last night. This is the only meal she has had that I havenāt had and she is sick, Iām not. The worst part was that she called to report it to the restaurant to possibly save others from the same fate, but Richardo (manager) laughed her off and was so rude. Let this be your warning. Their customer service and professionalism is lacking, to say the least. My wife says she will never go back, which Iām ok with because the food is bland, sloppy, and nothing Iāve had there has been worth coming back for. This incident will also be reported to the local health department. Hopefully, they can intervene and some good will come of an inspection to help others. Of course, we know food borne illness can come from anywhere and I can safely say that most of us had it. Itās never fun, makes you not want to ever go back to a place, but the biggest disappointment is how they treated my wife. My advice, go someplace else.
Oh, here is a picture of her meal (leftovers). Maybe the health department will want to test it? We certainly wouldnāt dare actually eat it.
Edit: 2/7/25 You are correct, you had an inspection 12/18/24. Here are the results for everyone to clearly see (good or bad). It must be hard for you to apologize, but itās a really easy thing to do. Unfortunately, you seem to lack common decency because of your pride.
It does look like itās common practice to not wash hands regularly, throw out food thatās old, or use clean/sanitary food preparation practices, so itās no wonder she got sick. Hopefully, this review will prevent someone else from being sick and going to your establishment. Donāt you wish you had not laughed at her and just said that you were sorry? You clearly did not follow procedure when a food borne illness was reported to you.

Both hand washing sinks were then fully supplied during inspection.

Observed 2 pans of red chile held beyond 7 days of preparation. Person in charge discarded chile during inspection. See voluntary condemnation.
25: 3-603.11 Raw or undercooked animal foods were served without a consumer advisory. Observed menu offering undercooked eggs and whole meat food items without a consumer advisory.
28: 7-204.11 Unapproved chemical sanitizers were used on food-contact surfaces. Observed the concentration of chlorine sanitizer in the food prep area greater than 200 ppm. Person in charge remade solution to proper concentration during inspection.

However, this location has proven me wrong. My fiancĆ© and I decided to give 3 Margaritas in Pueblo West a try for our weekly date night outing. This was a mistake. We arrived just before 5 pm and there seemed to be only once man working the whole front of the restaurant. It wasnāt until after we had ordered that more employees seem to arrive for their shift. I will give it to the one server though, he was doing his best to juggle seating customers, taking orders, and serving the food and beverages. We started with salsa and chips while we decided on our dinner. The chips were not fresh, and the salsa was very watery. The strawberry margarita tasted more like sweet water and tequila with a very slight taste of something resembling strawberry flavoring. The queso dip that we ordered for an appetizer was pretty tasty despite the stale chips. Though, that might be my Americanized junk palate that enjoyed the āquesoā dip because to me it strongly reminded me of the Velveeta cheese my mom makes for her parties. I ordered the Pollo Con Crema with the hopes that it would salvage the meal, but when it arrived, I was greatly disappointed. The plate smelled and looked amazing, but upon sampling the entrĆ©e I was overwhelmed with a strong mushroom flavor. I was unable to eat this $17 entrĆ©e because it tasted like I was eating a cheese covered mushroom. Originally, we planned to stop at another Mexican restaurant, but my 17-year-old son was unable to determine whether the restaurant we were headed to was opened or not. It gave me a great opportunity to have a dad moment to help him understand how to truly leverage technology. That said, My belief that everything happens for a reason manifested itself yet again, because we wound up at a this little Mexican Culinary Delight in West Pueblo. The chips and salsa were delivered by a kindly young man who smiled the entire time. The chips were thin, warm, and crispy - Just the way we like! The salsa had a little bit of bite to it, but accentuated the tastiest of the chips. I ordered the steak chimichanga and had it smothered with queso. My wife and son ordered the local burrito also smothered with queso. To be honest, the cheese was drippy... (My 17-year-old son said to say that, I really don't know what that means....)
For those of my fans back at sunrise Christian academy, if you ever come through Pueblo, first, be sure that you know how to use Google to be sure that restaurants are open when you choose to go there. Don't take after you-know-who. Second, I would recommend stopping at 3 Margaritas, don't let the name...
