Weirdest Valentine’s Day dinner yet! No water for at least twenty minutes. Blonde lady waitress was horribly unskilled with basic tasks. I watched her take dirty plates from customers and place them onto clean tables. Garlic edamame was so good and the tiger roll was great! Bartender was very helpful but clearly left alone due to the blonde lady. Not a single Asian person working it seems which makes for an interesting sushi vibe with a menu of a million options. Best part was the guitar player. Listening to Neil Young while eating sushi served by non Asians and watching a blonde lady wander around doing very little was so strange. Oh and the chicken yakitori was three tiny skewers with teriyaki sauce. It was a super expensive dinner. First time in Pagosa Springs. Go do a sushi roll pickup! But I wouldn’t sit and eat probably.

I spent a few weeks in Pagosa springs and imagine my surprise when the best sushi I've ever had was to be found in a small town in southern Colorado. Their prices are high but the price no doubt reflects the quality. As you can see from my pictures I had a large sampling. I ate well and would go here every day if I could afford it. The staff was very friendly and quick to refill a drink. Some places when you take sushi leftovers it doesn't stay good by the next day in the fridge. I ate my leftovers for breakfast the next day. It tasted almost as fresh as the evening before. I can't say enough good about Victors. I look forward to returning

I was pleasantly surprised by my choices, will be going back! Started with a house salad, the portion was larger than I anticipated and was pretty tasty with the ginger dressing, I had gyoza, and they were good as well. The flamingo roll was pretty awesome. I definitely recommend it. For dessert, I had the tempura fried banana, and that was worth the calories! The best part of my visit was Cheri! She was friendly and helped me through the menu and gave awesome service!

We were interested when a sushi place came to town, although we were just recently aware of it. We stopped by for a late lunch last week (they are open continuously from noon, 7 days a week which is very practical for this) and were amazed at the food and service. We were just in Japan, and Victor's has an excellent selection of Japanese cuisine (sushi, sashimi, tempura, ramen, yakitori, teriyaki, sesame chicken and vegetarian options) with creative twists. Apparently the owner has a long standing (28 year) interest in sushi and it shows. This is one of three Japanese restaurants that he and his brother Francisco are running (the other two are in Brush, Colorado and seasonally in North Carolina.)

The locale was a previous beer brewery restaurant, so it does not feel particularly Japanese yet. But decor was in good taste and comfortable (inside and outside seating). And the food says it all.....we had the baked mussels appetizer which was perfect and then sushi (shrimp tempura sushi with tuna on top and a phenomenal eel sauce). The mochi green tea ice cream dessert is a must. They have good wine and beer as well and , apparently, a wonderful Happy Hour from 3 to 5.

Kat was our friendly server and gave us excellent advice about the food. Francisco the chef came and said hello as well. We will be going back as...

My husband and I came here for lunch, we heard about a new sushi place in Pagosa Springs and wanted to try it. I'm so glad we did because the food was amazing. Everything we ordered was delicious, from the appetizers to the rolls. I also loved the fact that they have a full bar and serve cocktails not just beer and sake. The restaurant is also huge, they have so many places to sit and eat including the bar area with nice tables and high tops. They also have an outdoor patio area as well. I know this place used to be a brewery so I think they really utilized the space very well. I'm not sure why some people gave them bad reviews based on the ambiance, because there was nothing wrong with the space. Some people also left bad reviews saying its to expensive, but my husband and I ordered 3 appetizers, 3 rolls, and had alcohol and our bill was only $120. For sushi and drinks that's not expensive at all. The rolls are not small by any means and the most expensive roll on their menu has lobster and steak on it. You get what you pay for and the food is delicious. I highly recommend you try this place if you want to enjoy a nice sushi...

A lot to understand. I have eaten Sushi on multiple continents in dozens of city's across the globe. The sushi here is ok to good at best. It's not excellent by any stretch. The prices are high, actually quite high. I ordered a few specialty "high end " pieces just to see how the quality of tuna was, and it was not worth the money. Not better than city market tuna, in my opinion. I also got a BBQ squid, it was badly over cooked. Flavor was fine, texture was challenging given how over cooked it was. The atmosphere is good, enjoyed that. Service was good, and I also enjoyed that. All told I would go back, but I won't be in a rush to do so. Especially given the price. Also, understand that bringing in decent seafood to Pagosa is a challenge, so a bit pricy is expected. But the prices were too high for what you get in my opinion. I did not skimp, so you could eat much cheaper than I did. And that would be a good choice since the high-end food was not worth the money, stay with the basics and you...
