If you’re a sushi purist, this place may not be the best choice for you. However if you’re like me and enjoy Americanized sushi, you have to give this place a try. It’s the “Chipotle of sushi” in a way, and I love everything about it. They have pre-designed selections you can pick if you want, or you can go down the line picking which protein(s), veggies, sauces, and toppings you want on your bowl or roll. This means you can go as simple or as crazy as you want, and as traditional or unconventional as you’d like.
The prices end up being a bit higher than your average counter-serve restaurant, but it’s absolutely worth it for the quality of the food and the portion size. I also highly recommend shelling out the $2.50 for a fountain drink. It killed me a little at first, but their fresh and unique drinks are amazing. Combine that with the friendly service, dedication to the environment (almost everything they use is compostable) and wide variety of ingredients to add to your meal, I don’t know how anyone could not like this place. Definitely give Fusian a try if you haven’t yet!

But when you try and operate a multi chain establishment and quality takes a backseat to quantity you get poorly paid workers who don’t care at all about furthering the company’s interest, serves you right, right? The curry bowl was overwhelmed with long cuts of veggies so from a functional standpoint it’s awful, this is barely thoughtful, it’s a collab without a dime of thought or presentation, the soy beans overpowered the flavors, the broth was oily, the strawberry sticky rice: salty and not a pleasant contrast to the bland of rice and cooled overly hard semi sweet chocolate chips and un-ripe strawberries with all over no agave to speak of. The staff is super involved and friendly and the message they get across is great. Sustainable supply chain accross as many aspects of their operations as possible. Their monthly menu item will always keep you on your toes and allow you to make the perfect unique roll.
They have plenty of different options in case the thought of raw fish scares you. They have plenty of cooked options for you to use in your rolls. Also, they accomodate many different allergies and life styles choices in case you are vegetarian or vegan and will gladly prepare your food away from other products if needed.
They offer unique and refreshing drinks which are created in house as well as fresh sides such as seaweed salad and a carrot ginger salad.
Enough cannot be said about Fusian as a place to get some great food as well as promote sustainable and fresh life styles.
