The sopes on the other hand have very complex flavor & texture with the hot & beefy birria, soft corn cake, tangy pickled onions, cool sour cream, & herbaceous cilantro & oregano. My experience with birria leads me to believe that consume is king. If the consume is great, the birria is great. And the consume is great.
I’m a sucker for sopes, so I also tried the birria sopes. . . just wonderful. The salsas are tasty, but I would have liked a bit more spice. I’ll ask next time. They may have been trying to protect me. Mi piel es güero, pero mi panza es pura mexicana. How could they know?
