HeyBings in Irvine completely brightened my week. From the moment I walked in, the space felt warm, modern, and full of care. Everything here is made to order with fresh ingredients you can recognize no powdered mixes or shortcuts, and you can truly taste the difference.

BINGSU

Matcha Strawberry Bings The perfect balance of earthy matcha and sweet strawberries. The flavor is infused throughout the ice, not just sprinkled on top, so every spoonful tastes rich and smooth.

Melon Lime Breeze Bings ‍ Light, citrusy, and refreshing. The combination of melon and lime is unexpected but so clean and bright, perfect for a warm day.

Vegan / Lactose-Friendly Bingsu Options: HeyBings offers bingsu made with a coconut milk base, which is an amazing option for anyone who is dairy-sensitive or prefers plant-based desserts. The flavors available are Classic Injeolmi, Strawberry Delight, and Mango Paradise. Each one is creamy, fragrant, and satisfying without feeling heavy. I love that they made this inclusive without compromising flavor. (I tried this when I went for the 2nd time.)

WAFFLES

Mixed Berry Liège Waffle : Golden and crisp on the outside, chewy on the inside, with vibrant berry toppings that make it feel indulgent but not overly sweet.

Cheddar Cheese Mochi Waffle : A fun twist that blends sweet and savory. The mochi texture gives it a nice chew while the melted cheddar adds a comforting saltiness. (Was so good I ordered it the second time)

DRINKS

Iced Matcha Latte Smooth and earthy with just the right amount of sweetness. It paired beautifully with the desserts.

Grapefruit Refresher Tangy, bright, and a perfect palate cleanser between bites.

Iced Ube Latte : I actually tried this when I went back for the 2nd and it was pretty solid. Creamy, sweet but not too sweet. And a very solid combo alongside the Cheddar Cheese Mochi Waffle.

What stands out about HeyBings is their attention to detail and commitment to quality. Their bingsu bases are infused with real flavors, their fruits and purees taste fresh, and the presentation feels like a treat for every sense. It's not just dessert! It's an experience colorful, refreshing, and made with care.

I'll be honest this place is not friendly to anyone with any kind of allergies.

I'm leaving this review for constructive feedback because personally, I find their choices limiting here. I wish that they served mochi waffles without the ingredients mixed in. I have tree nut and dairy allergies, so that doesn't leave me a lot of options for the waffles, that I wish I could try so badly. Also, their coffee is all espresso based, so no cold brew or drip. So you can't really count on this place for being a regular coffee joint, it's more of a dessert and aesthetic latte spot.

They do serve little pup cups so they're accommodating to dogs.

I tried to give this place a try more than once, but it's obvious they have no intention of expanding their menu or trying to think of solutions. They're literally happy to just say "no" awkwardly and watch me walk out, instead of say "oh thanks for the feedback, we're new so we'll keep that in mind" lol. Maybe I'll just try their bingsu but also not sure they have dairy-free options there either. Place is promising but would do even better if they had...

The best bingsoo I’ve had in California! 10/10! What makes this place stand out is that the shave ice they use isn’t just plain ice, it’s actually premixed with different flavors such as milk, matcha, black sesame, and chocolate. The texture of the ice is so creamy, literally melts in your mouth! All of the syrups and mochi are made in house, which is pretty amazing! You can tell the owners put a lot of love into their desserts. I also loved the ambiance of the place. It’s a nice place to hang out with your friends and chat, a great date spot, and also a good place to bring your laptop and get some work done.

Also, it’s dog friendly! They serve a puppicino, which is essentially a cup of whipped cream, and dogs love it!
