I recently discovered Wilson Coffee Roasting Co, and I have to say I am thoroughly impressed with their coffee selection and quality. From the moment I walked into their shop, I was greted with a warm welcome and a delicious aroma of fresh coffee :-)

I appreciate their attention to detail when it comes to roasting their coffee, and it's evident in the delicious flavor and aroma of every cup. I love that they roast their coffee in small batches, ensuring that every bag is delivered at the peak of its flavor. Although their coffee is a bit pricey, it's absolutely worth the extra cost for the quality and freshness.

I can give whole heartedly recommendation for the medium and light roast coffee offered (we are not into dark roast): The Brazil (light roast), that makes some of the best pour-over The Honduras (Medium roast) that produces amazing sweet crema in the espresso, and wonderfully delicate pour-over, with sweet aftertaste Guatemala (medium roast): "king of latte"- nutty, sweet, lingering complex after taste that leave you wondering why there is no more coffee in the cup (best give it 198f if you can control temperature of espresso machine) Mexico (Medium roast): espresso/latte type, boasting heavy crema, a bit more "relaxed" coffee if compared to the Guatemala. I find it delicate, more balance chocolate/nutty/acidic. My favorite when doing Latte-art (I am not good at it .. but I do try )

   Read moreMy wife and I decided to find and support a ânew to usâ coffee shop. We walked in all smiles and were the only customers there. First let me say it is a very small cute place. Hard to find off the main street. Located in the back alley. So walking in we werenât sure if it was simply a roasting company and not a walk in cup of coffee kind of place. We asked the 1 employee working there if they serve coffee (and here is the start where 1.5 stars were lost) and he quietly pointed down at a menu laying on the counter. We were excited but he seemed to care less we were there. No smile. No âwelcome inâ comment. It felt like a scene from Portlandia. Anyways - another .5 star was deducted because they didnât have almond milk and the coffee overall was just ok. The price however is great. Very reasonable. Wouldnât go back but glad we tried something new. Hopefully the employee sees this and maybe works on cracking a smile...
