We went to Gibsons last night for dinner. This is the first week offering a full menu. We live in the neighborhood and we were regulars at Maguires. We are hoping this place becomes our “go to place”. Here is a rundown of what was ordered.
We started off with cocktails. My wife ordered their signature drink, the basil gimlet. I had a dirty martini with blue cheese olives. Both were good, but nothing special. I was surprised when we got our check that my $12.50 happy hour martini had a $2.50 up charge for the blue cheese olives, bringing that drink to $15.00.
Appetizers: we ordered the crab cakes and fondue. The crab cakes are not that good and were $28.00. You get three very small crab cakes about the size of a silver dollar and you’ll have to look hard for crab. Don’t waste your money on these. The fondue was very good, but the croutons that are included is nothing more than a toasted hamburger bun that was torn into pieces ( not cut but torn). We did order pretzel bites to dip for an extra $8.00.
Pear salad was good, a bit spicy, but good. Again nothing special with that.
Entrees: The sea bass was flaky and cooked to perfection. It came on a bed of risotto with a chocolate and strawberry reduction. Too sweet for our liking. The 1/2 chicken was fantastic. Juicy and cooked to perfection. The pan gravy was outstanding. The veges that came with it were ok. The side of $9.00 cream spinach was flavorless.
Overall, we thought it was good, with the exception me of the things mentioned above. It will be a while...

Before we even sat down, we were completely blown away by how stunning the space is. From the elegant decor to the thoughtful design details, it’s clear that every inch was crafted with style and care.
Now let’s talk about the real star: the food. The preview menu gave us just a taste of what’s to come, perfectly balanced with appetizers, salads, entrées, and desserts. My wife ordered the Wagyu ribeye (melt-in-your-mouth perfection), and I went with “the bird” and the salmon which was equally incredible. Flavor, presentation, and quality... everything hit the mark. And the prices? Surprisingly reasonable for this level of dining!
Carrie, the owner, is the heart of the place.. warm, welcoming, and clearly passionate about what she’s created. She even stopped by our table to ask for feedback, which we loved. The wine selection alone deserves its own round of applause; her enthusiasm for great wine shows in the beautiful displays throughout the restaurant.
Oh, and here’s the kicker! We heard there’s a speakeasy coming soon that’s supposed to be next-level. If it’s anything like the main restaurant, we’re in for a treat.

I know they’re still in their soft opening phase, so I’ll be a bit lenient about timing…dinner and drinks took a little longer than expected.
Our server (a younger black gentleman, whose name I unfortunately don’t remember) was very sweet and apologetic about the kitchen delays, which we appreciated. The crab cakes were flavorful and delicious, though a bit on the mushy side. The short ribs and ribeye were both tasty with great portions, though they could’ve been served a bit hotter. Dessert was just okay.
Someone also came around asking for feedback and took notes, which really impressed me…it shows they care about improving and listening to guests. Overall, a lovely experience with great potential, and I look forward to seeing how they...
