Those who have read my posts know that I am never "bought" into giving a stellar review. Being authentic is what I am[mostly] all about... So I chanced upon this restaurant at the last minute on a chilly Sunday evening. Having seen the red-on-black snake on their sign numerous times(and tucked behind that ubiquitous stainless steel skeleton of a plane), I thought it was high time I found out what the big D was with regards to this eatery. Upon walking in, my friend and I were immediately welcomed by someone who seemed "managerial". We were sat at a booth directly in front of the door. As my eyes adjusted to the dim lighting, I could see a few carefully distanced tables with fellow diners. Chris, our server, introduced himself and got us started on some chips and salsa. Expecting the "usual(that being basic broken chips and canned or semi-housemade salsa)" we were given a bowl of warm and whole freshly prepared tortilla chips with one of the best scratch made salsas I've ever had. Smoky, with a decent "after heat" bite. It was hard for me not to want to finish the entire bowl! Typically when I try out a new Mexican eatery, I order nachos. Why? It's simple. For me, it's the easiest thing for the kitchen peeps to make. It is also my thinking that if they screw up this plate, what else will they not make well in the future.?.? Also, I have had my fair share of less-than-wonderful nachos throughout Colorado. I was quite shocked at what I received at this place. Expecting the basic, I received what could only be described as a visually stunning and very flavorful take on something so simple. Instead of a pile of chips with beans, cheese, and a few canned jalapenos, I received layers of interesting flavors. Delicious shreds of pork, intertwined with four cheeses, Black beans, sour cream, pico, and guacamole. The biggest shock was the HOUSE MADE pickled onions AND jalapenos!!!!! This isn't a TYPO....! Los Chingones truly took something so pedestrian and flipped it on its head! To say that these nachos are the best is an understatement.... Bravo to the owner and the talented "back of house" for creating my now favorite go to dish!!! I cannot wait to get back there and taste the rest of the menu.. #BestOfTheBest! ChefCraigers

Got there at 547pm. Got a table. Took a few minutes to get drinks. Drinks being non alcoholic. Ordered chips and guacamole. Took a good 15 minute to get that. It was pretty bland. Put order in when the chips and guacamole came out. Took another 20 minutes or so for that to come. Burrito was HUGE. My husband said also very bland. I had the enchiladas. The rice was flavorless. The black beans were okay. The enchiladas themselves were pretty good. We finally got our ticket to pay at 7pm. This just really isn't a sit here for over an hour restaurant. Especially when no one came back to see if my husband wanted another drink. Nobody asked if our meals were good. I think the only reason they finally brought the bill was because I stood up. This was even after I had asked for a to go box. I stood up to leave about 10 minutes after that. This will go on our "no reason to come back" list. I also hate that the credit card machine is right on front of you and them when it comes time to pay. I did tip 20%. It was set at 25%. Personally I would have only tipped 15% for the reasons I states above. To me tipping is still based on service not on the fact that employers don't pay enough.

Arrived around 5, Happy Hour but, immediately asked our (very nice server) if it was possible to order from the regular menu as well. She said, it was possible. Started with: Crispy Calamari (👍 - yum!) and our drinks of choice. So happy, (good, strong) coffee 👍was available, MY drink! Ready to order our next round of food, enchiladas, which my husband was looking forward to having and the burrito bowl for me, a different (male) staff informed us, they did not offer that in this location. So, we settled on: Steak Skewers Grilled Cheese Sandwich and Tomato Soup (👍 - loved it!) Arroz con Leche Fritters (too sweet for my taste, so unless you are really into sugar, then, it'll be your choice). It was good, not great. The stars were the Calamari and the Grilled cheese and THE tomato soup! Disappointed with missing out on the other menu items. No wait and was seated immediately. Maybe, not so easy had we come in later. Parking WON'T be a problem. Overall rating, higher than a 3 but, slightly lower than a 4.

A very cute place, I wanted to love it but there are much better urban/modern taco options available in the Denver area.

First off, our waitress did not introduce herself but instead started with "This is Chef Troy Guard's restaurant..." like she had been coached to say that. It felt very impersonal and more like the chef wanted to make his name seem relevant rather than letting the food speak for itself. Does anyone really care? Sounds like other people find it irritating based off the other reviews here... very offputting.

Started off with drinks, they were very good!

7 layer dip - although it tasted good, it was very small and in a container that made it difficult to get all the flavors together. The container also led to a lot of waste (couldn't get the guac in the bottom, had to spoon it out etc). I did enjoy the chips!

Salsa - we got the salsa flight (3 salsas) and we both only liked the tomatillo. The Rooster and Chile-Pasilla are very sweet.

Tacos - tried all the signature tacos and the carrot taco. Loved the Cotija but very disappointed in the jalapeno popper (lacking flavor complexity and texture that I would expect from a restaurant that has the chef's name literally everywhere) and the Chicken Leg (where were the Taki's!?). The carrot taco was good but nothing to get excited about.

I'd come back for drinks and apps but that's about it. Tacos Tequila Whiskey (Pinche's) is 100...

Yes, we are back again! This place is just hopping all the time, great service Kara she is such a cool chick. I mean that in the nicest way possible. You have a great personality! Walker was our bartender tonight and he was spot on with our Clase Azul Reposado tequila. Could sit and watch him make drinks all night! He really knows his way around a bar. I’m not even going to try to tell you I remember the owners name who happen to come by and introduce himself because he remembered us from last visit but I do believe I have at least 20 years on him so I’m kinda untitled hahaha! This is a great place to relax and have fun with inside seating or outside patio you can’t go wrong with this knowledgeable staff and friendly faces.

I have one word for this place: Hailey!! I don’t know what you people are paying this young lady but you need to double it. This manager is on point, people skills, personality, and can make a mean Clase Azul reposado margarita! We like our tequila one way with only two ingredients and she nailed it every time.

We had the rattlesnake nachos and the burrito bowl……amazing flavor and fresh ingredients. This will definitely be our new go to Mexican fiesta hang out in Denver when we come up.

All the staff was very friendly and they all had great...
