Mad Greens began in Denver a few years back - it was 2004 - with an attractive conceit. The founders had researched interesting and tasty salads created by famous people through the decades and centuries, and highlighted these on their menu. Each salad came with a humorous and interesting story, mixing biography, cultural history, and nutrition with, well, jokes. There was a general build-your-own salad option, of course, and lots and lots of ingredients to choose from, but those personalized salads of the Famous and Infamous - those were fun.
The franchise seems to have moved away from this premise in the recent years, which is a shame. That entertaining research separated Mad Greens from other salad places. Now, the famous names seem to just act as catchwords for ethnicity - the Don Quixote salad is simply a Mexican salad (not Spanish, apparently, nor related to Cervantes).
Luckily, at least some of that original research is still available to customers, for it is posted on the walls as a part of the decor. I've taken some photos to show the postings at this location.

First visit, picked "Bonnie Parker" with grilled chicken, smoked cheddar, craisins, apples, spice pecans and switched to blue cheese dressing. Maine Root Beer was a real treat, staff was so pleasant and eager to please. No waiting at 6:30 p.m. Realized you can order ahead and also have takeout. Highly recommend, absolutely delicious! I visited the Colorado Blvd & Evans location, 2073 S Colo Blvd, Denver. It was an easy walk from Colorado Station Light Rail.
Came back 6/28/19 to try takeout. Picked my favorite, "Bonnie Parker" again, switched to blue cheese dressing and then added garbanzo beans at home. Of course, had to have a Maine Root Beer too. Another great meal, great way to end the week with light, refreshing meal from comfort of home!
Ended month of July with another great visit after a long day. Even using a walker, short distance from Colo Light Rail Station. Opted for take out to add extras again at home, nothing beats the "Bonnie Parker" and Maine Roor Beer. Love the friendly staff too!

All the salads (available in 3 sizes) sounded delish, but I settled on the Bonnie Parker: chicken, seasoned pecans, aged cheddar, apples, craisins, and a lovely cider vinaigrette. I got the large for about $14 and it was a very generous and well balanced portion. I added a fountain soda and pita bread for 2.50, annnd a cup of red pepper smoked gouda soup for I think an additional 1.50. The girl making my salad and ringing me up was really nice and worked fast. It only took 2 minutes or so to go through the line and pay. The soup was A+, flavorful, perfect consistency. The pita bread was just right. The salad ingredients are freah and there are a ton to choose from. And lemme tell you about the delightful fountain soda...no big brands here, only a variety of local, organic cane sugar sweetened flavors.
