Bread and Culture is a real gem in Flemington. The pastries and bread are fresh, creative, and clearly made with care. The coffee is solid, the space has great energy, and it’s easy to see why there’s always a line. It’s a special place and it deserves all the support it's getting. That’s also why I want to offer a bit of feedback — not as someone who runs a business, but just as someone who loves this place and wants to see it flourish. The popularity is there, but the setup hasn’t quite caught up yet. With only one person working the register and taking orders, things get backed up fast, and simple mistakes (like getting an iced vanilla latte instead of hot, or forgetting to add the vanilla) happen more than they should. On top of that, customers often ask questions — about the breads, ingredients, allergies, or what's in certain items — which takes time and attention, especially during busy hours.
Another thing that comes up often is availability. Since items sell out quickly, customers sometimes go through two or three choices before landing on something that’s still available. For example, I watched someone go through three different items that were already sold out — again, not the staff’s fault at all, but it slows down the line and adds pressure to the person working solo.
Just adding one more person at the register during rush hours could make a big difference — not just for speed, but for supporting both customers and staff. It would make the whole experience smoother and help everyone feel more taken care of. Also, a small note on the coffee: it tends to lose heat pretty quickly. Not a dealbreaker, but maybe something to look into as you keep fine-tuning things. Paolo and Michelle, the talented duo behind this bakery, continue to impress with their commitment to using the best ingredients. Every bite is a testament to their craftsmanship and passion.
Today, I sampled a few of their offerings: the chorizo and egg croissant, fig danish, and blueberry cruffin. Each item was absolutely to die for, but the chorizo and egg croissant stood out as the star of the show. It’s like a Mexican breakfast nuzzled in a perfectly flaky, buttery croissant. The combination of flavors was simply amazing, and I’m already looking forward to having it again.
The fig danish and blueberry cruffin were also exceptional. The fig danish had a perfect balance of sweetness and richness, while the blueberry cruffin was light, airy, and bursting with fresh blueberry flavor.
One of the highlights of visiting Bread and Culture is the exceptional service. The staff always ensure our pastries are perfectly heated, enhancing their delicious flavors. Their commitment to customer satisfaction is evident in every interaction, making us feel valued and appreciated as customers.

I ordered the Fava Bean and Greens toast—$15 plus tip, because the server was kind. But it was an absolute waste of money. It’s an open-faced sandwich with a thin layer of fava bean spread and a couple of sprigs of arugula. It seemed like the managers had a bet on how little product they could get away with putting on the bread. The fava bean spread (what little there was) is supposed to be the star of the show, but it was flavorless. It says “pecorino cheese,” but there were only a couple of shreds—barely even a thin slice. I might give this place another chance… maybe if I go on a diet. :D

I hope that will help you find the transaction. Some more information that I hope will benefit you as a business owner...I believe your store was overwhelmed by the amount of patrons that day as you were out of almost all items (baked goods and sandwiches). So, it is possible that the kitchen staff were using the remaining ingredients sparingly. I hope success for you and your family business.
