We had dinner there last night. The atmosphere and design of the restaurant is fantastic and such a great addition to the local scene. It's comfortable, romantic, sort of "Clubby" in a cool way, a great place to meet up with friends and enjoy the evening. But, there is work to be done bring it all together.
We arrived just before 7pm, and there were 2-3 tables being served. We were greeted and escorted to our table. We ordered the Mussels as an appetizer, salads, and the Salmon, and the Filet au poivre as our mains.
Another reviewer noted the need to fine tune the service, and our experience was similar. Our server was very pleasant and helpful. But the sequence of food delivery is a "make or break" hurdle for any restaurant and the coordination of what was ordered with what/when the kitchen prepares the next course is key.
Our mussels arrived, and to be honest, having just returned from Belgium, they were as good or better than what we had in Brussels. Bravo!!!
But... As we were just enjoying our Mussels our salads arrived. The salads sat on the table while eating the our appetizer. BTW: We asked for a balsamic vinaigrette, but they brought us a balsamic reduction. Which was very thick and not easy to mix with the salads.
We finished the Mussels, and started on our salads, and then our main courses arrived. A little early, but no big deal.
The Salmon was ordered to be medium rare-medium, but was closer to medium-medium well and dry.
The Filet, was MR and tender but the sauce was overtly salty and took away from the flavor of the Filet. The frites, were near perfection.
Bottom line, Vieux Carre' is a welcome addition to the Flower Mound restaurant scene. French Cuisine can be a challenge, but when done right can be a huge success and a fun dining experience. Fine tuning the service, and food prep are keys to any restaurant, and the same is true for Vieux Carre. They have a great concept, and huge potential for carving out their place in the local area.
Value for the price is good, and we will return, for another try for if nothing else, to have wine, and enjoy more Mussels! But with so many options in the area, our hope is that improvements continue.

From the moment we walked in, the ambiance set the tone—quiet, warmly dim, and inviting, with a guitarist playing softly in the bar area. The music added a wonderful layer to the atmosphere without being overpowering, making for a truly enjoyable setting. We started with drinks—my wife enjoys a California or Oregon Pinot Noir, but the only three Pinot options by the glass were French. While she enjoyed her selection, she would have loved to see a broader variety. I opted for a Rye Old Fashioned from the drink menu, which was well-balanced and expertly crafted. For appetizers, we chose the Escargot and the Fondue Fries—both were exceptional. The Escargot was served in a small saucepan with garlic, chardonnay, and Beurre Blanc, and it was absolutely delicious. However, the toasted baguette served alongside was a bit too dry to fully soak up the incredible sauce. A softer or more absorbent bread would have been a better pairing, but even with that minor detail, it was still an excellent dish. The Fondue Fries were outstanding—the potatoes were perfectly cooked with a crispy exterior and a soft, fluffy inside, and the rich fondue, chives, and bacon made for an indulgent, flavorful bite. For our entrée, we shared the Lobster Orzo, and the restaurant truly impressed us by splitting the portion onto two separate plates—something we always appreciate but don’t see often enough. The portions were generous, and I can’t imagine eating the full dish alone. The lobster was plentiful and paired beautifully with the creamy orzo, mascarpone, and parmesan, making for a rich and satisfying meal. All in all, it was an exceptional experience. The quality of the food, the ambiance, and the thoughtful service make Vieux Carré a place we’ll definitely return to.
