Ichi Shabu is a newly opened hotpot restaurant offering premium meat and seafood selections with a modern, upscale vibe and a variety of flavorful broths. Our server Diose did a great job introducing the concept and recommending dishes, making the dining experience both smooth and enjoyable.

📸 Overall Hotpot Setup Each guest gets an individual pot with their own broth, and the whole setup feels elegant and high-end, far fancier than a typical shabu-shabu or hotpot place. The lighting, plating, and presentation all elevate the experience.
🥩 Lamb Slices Beautifully marbled and thinly sliced, the lamb cooks quickly and stays tender with no gamey taste. The quality is top-tier and one of the freshest cuts I’ve seen in Fresno’s hotpot scene.
🐚 Abalone Served on ice with an orchid garnish — stunning presentation. The abalone adds a touch of luxury, fresh and chewy in texture, and pairs wonderfully with the savory broths.
🍖 Chizu Pork Katsu (Appetizer) A pleasant surprise! Crispy outside with cheesy, melty interior — great contrast in texture and flavor. A must-try before diving into the hotpot.
🍰 Yuzu Cheesecake Light and citrusy with a hint of yuzu aroma. While the texture is smooth, it’s a bit monotone in flavor, but still a nice way to end the meal.

Read moreWriting this a day after eating here and I’m still trying to figure out what $200 bought us. Our $140 “meal for four” came with seafood plates with a whopping three pieces each. Asked our server if they should have four pieces (one for each person) and she said three is normal and we would have to figure out how to divide it. After discussing who would get the third shrimp, we moved onto the meat plates with five pieces this time. Huge upgrade.
I’ve been to plenty of shabu spots in LA and OC, and honestly, this place delivers exactly the kind of experience you’d expect if someone said, “It’s like shabu, but in Fresno.” Even at $140, our meal didn’t include some sort of small appetizer, so our server suggested the $18 omurice assuring us it would be more than enough to share among four people. She wasn’t wrong. If you consider two spoonfuls of rice each enough to satisfy your appetite.
All in all, an unforgettable experience. Mostly because we’re still struggling to understand how little food we got. Grand opening or not, this was a joke.

You can definitely see and taste the quality of the food. As for the setting and ambiance I love how the setting is dark but the lights inside create a warm atmosphere that makes the experience even more intimate if you were to take someone out here in a date. Lastly for the service I would say that our server Camry did a great job. She was attentive and the rest of the staff that brought out our food was as well! The old fashion was amazing, food came out fast , didn't have to wait that long for food and appetizers. For those looking for a "bang for your buck" I would definitely say J-Pot is the way to go.
