So, we've been a few times now, so have a few experiences to go off of. First off, the pastry quality is quite good! Definitely better than you'd find at most bakeries! With the exception of the almond croissants - which are a bit dry and hard, everything else we've had has been quite good! Unfortunately, the overall "flow" of the place, to include pricing, apps, ordering, service leaves quite a bit to be desired. For starters, they advertise that you can "get a free pastry" when you download the app... well.... guess what? It takes some time for the offer to load in your app, and the two times we've done it with separate phones it seems to always "magically" appear AFTER we've made and paid for our order - sneaky! Then you only have a week or 2 to use it - so.... Do you "buy more" just to get the deal? And it's a "free pastry" with a purchase, so basically buy one get one free. Another offer we used was "get a free pastry with the purchase of a coffee" - well sounds good, but, guess what? If you have multiple pastries guess which ones free? Yup, the cheapest one, of course! Next... if you do order online it takes them a while to fulfill the order! They say "go to the counter and let the staff know you placed an online order" - well, there's a huge line, so do you go up to the "pickup" counter where you're never acknowledged or wait in the long line with all the other customers? Additionally, the whole layout of the store is terrible for "crowd control"! You pick out your pastries yourself, then pay at a counter... fair enough, but the line snakes right through all the display cases, so you're butting in and out and all around people who are standing in line to pay. Then, when you do pay, they have at least 3 terminals, but only ever seem to staff 1 or 2! Another thing is, if you forget to "scan" your QR code from the app, they say you can scan the QR code on your receipt to get credit for rewards... well, guess what....you guessed it! No QR code on the receipt! If it's not crowded, and you can somehow figure out how to "game" their app offers...which maybe for us 4th time will be a charm....? Then, I guess I can start to like this place more....? Again, the pastries are quite delicious and in this town there's not many options, but, for goodness sakes - it's not hard to get frustrated at this place! Work on the...
Read moreHappy to have an Asian/French fusion bakery/Cafe in Fresno!
My first experience at PB was in Seoul in 2010, and it's awesome seeing it grow globally over the years. I love the small local businesses too, but I've got to say, they have engineered the bakeshop to have the perfect humidity and commissary goods that bake off fantastic laminated doughs (croissants, especially, and I'm a self-declared croissant snob... Tangent: Don't get croissants in Nice, FR because you'll have regrets). I prefer East Asian style cakes that aren't too sweet topped with whipped topping instead of the cloying, sweet icings stateside. I hope they start to carry the Sweet Potato Cake. For now, I'll need to head to the LA or Bay Areafor that cake flavor.
Unfortunately, the queue layout isn't as intuitive to locals as it is in Asia, LA, or the Bay Area. Instead of queueing around the display case as the end of the queue approaches the door, locals take their tray, mound pastries like the store is never going to be open again, then continue the queueing outside the door. I guess I just always took it for granted that it appears you would queue around the display case đ€·ââïž . From what I recall, it's meant to be more like a place you frequent often. Holding these pastries for days in the counter or fridge will compromise their integrity. It's also possible that the mounds of carbs will be devoured with Cookie Monster-like fury by double-fisting, pastry weilding family and friends within the hour.
The line moves quickly, so be patient! If someone ahead of you wants certain pastries heated or a coffee drink, "that's what's taking so long." Please be kind to the staff. They don't deserve your impatience. Everyone has been very friendly, and they clearly take greeting customers with eye contact and verbal acknowledgment seriously.

Read moreOn 5/14/25 my girlfriend and myself ordered a few items to go. We got a crab sandwich, half a baguette sandwich and a salad. The first bite of the salad was extremely bitter. So bitter that my girl couldn't eat 5 bites. I tried a bite and spit it out. We split the baguette after that. We both noticed that there was literally one slice of cheese and one of turkey with a thin sliced tomato. We paid for a piece of bread. Let's go back to the salad. The utterly bitter salad had 3 pieces of chicken. Not only did we stop eating it due to how bitter it was but we saw MOLD on the chicken! MOLD! We tried to call to get our money back but was met with a phone that nobody answered. That's very POOR food safety and I'm wondering if we will get food poisoning. Does the owner know anything about food safety? Does the owner know the proper temp to cook chicken to? Does the owner and employees have current Food Safety Handling Cards? Blue looking mold on chicken tells me that they don't. I will never eat from this place again. If you want bitter salad and chicken salad full of MOLD, then this is the place for you. To the owner, put your chicken in a proper refrigerator, off of the ground and INSPECT your food before serving it to us Fresno residents. We are still wondering if we will get sick. Maybe that's how it's done in Paris but here in Fresno, we have food safety standards. Nothing like a case of mold poisoning and bitter lettuce to ruin your day. Terrible. Oh yes, thank you for the tiny slice of turkey in a baguette and NOT answering your phone. 1 star and I'll be sure to review this on Yelp and anywhere else I can. The Fresno county health inspector should...
