Good rule of thumb, "modern" in a restaurant sense means bland, overpriced, and void of a lot of what made it traditionally tasty. Springly accomplishes what most "modern" takes on traditional cusine does: let you down at a price that makes you bitter.
You won't find many Vietnamese people over 50 in the place. And that's because they inherently know that you can't make great food better by charging more for subtracting quality. Instead you'll be surrounded by man buns, frayed jeans and jorts, shirts with bands they've never actually listened to, neck beards, and dirty birkenstock and flip flop cradled feet. It clearly caters to young people who can narcissitically instagram how culturally hip they are because they've had "ban me"
Springly chooses, instead, to substitute quality of food for "atmosphere." This is also subjective. New paint and chrome rarely leads to tasty Vietnamese food. Stains on the walls, slippery floors from spilled greasy goodness, and sticky tables are the hallmark of delicious Vietnamese food. There is a serious waste of space in the dining area. The line to order doesn't flow and creates a traffic jam near the register and bathroom.
Preface the food review: their bread is really really good. Fresh and soft.
The food was OK. The pho banhmi was pretty good. There just wasn't a lot of it for almost 20 bucks. Their pho broth wasn't too bad, though. This would be the only thing I could recommend and not feel guilty.
The chicken banhmi was flat out plain. Don't waste your money.
The traditional banhmi looks traditional, but that's where it stops. There was almost no pate. And it was really plain as well.
Lastly the charbroiled spring rolls are ok. They're mostly lettuce. The curry sauce is good. But not good enough to warrant ordering spring rolls.
We all agreed we will probably not be back. At least purposefully. Maybe if we're hungry and at Kirklands.

Read moreI am going to be harsh. It is pretentious. It wants to be bougie but it's not. I see people ordering spring rolls that is like stuff with banh mi options. That different for sure. They do have banh mi option which I love. I really wanted to try the pho brisket, it sounded very good and I was willing to overlook the price of $18 for that sandwich versus the other sandwiches which costed $10. But once the gentleman pulled the bread loaf out of the plastic bag, I saw a 6 inch French bread, I quickly said that I'll take the lemongrass chicken instead. I am so glad that I did because that sandwich was so disappointing. As a fan of banh mi's the bread was really gummy. It was toasted but it lacked the crunch. The chicken however was super tasty. They needed to add more spread to help that bread out. I also had the chicken nuggets and fries. This was good and the price matched the food. The nuggets reminded me of Wendy's which is better than McDonald's but the fries were cooked to just right, crispy. There was no wow factor for me. The service was slow and I believe they even forgot my sandwich at one point. From what I saw the drinks are tiny and the cups that they serve the drinks in will make people think that it's cute. I don't buy cute, I buy quality and quantity. I will not be back...
